Mom's Zucchini Bread
I made this recipe as follows and it was not as moist as I expected it to be based on the other reviews. I made a second batch and doubled the recipe and added 1 can of crushed pineapple (undrained) and it turned out marvelous. I prefer my dessert breads very moist and this certainly did the trick. I gave mini loaves as thank you gift and people gave great compliments.

Pumpkin Fluff Dip
Made this recipe for my office Halloween party and it was a big hit. I did not have pumkpin spice so I used trader joes chai mix (2 teas.)instead and it turned out wonderful. I also added the vanilla. This is quick, easy, light and lowfat. Can't wait to make it for the holiday!

Spinach Stuffed Chicken Breasts
This recipe as is I would not have enjoyed however I took the basis and added my own ingredients. I first used monteray jack instead of feta because I don't like it. Then to the spinach mix I added chopped onion and mushroom as well as chopped bacon instead of wrapping the chicken in bacon. Once the chicken was cooked I topped it with a bernaise sauce. It was very rich and flavorful. Everyone loved it.
