Hungarian Noodle Side Dish

No, no, no, no, no. I grew up eating this dish, and this is not how it's done. Wide eggy noodles, cottage cheese or, better yet, farmer's cheese, sour cream, salt, poppy seeds. End of story. Assemble and bake in oven. No bouillon, no cream of mushroom soup (yuk), no parmesan cheese. Delicious, delicious, delicious peasant food. PS. No meat, either.

Zucchini and Ricotta Casserole

I thought this zucchini-ricotta casserole was absolutely delicious. I find zucchini hard to love--so watery and bland-- but this was rich, creamy, and flavorful. Make sure you bake it until the ricotta is browned and the zucchini is soft. Next time I'm going to drizzle a little olive oil over the cheese before I bake it. Yum, yum, yum and healthy, too! Thank your, chef John.

Greek Lentil Soup (Fakes)

You're right. The vinegar isn't in the recipe. It's in the first comment, which was posted by the woman who wrote the recipe. As to how much vinegar, that's like asking how much ketchup (or whatever) should I put on my hamburger. As much as you like.

Green Chutney

This is a staple at my house (with coconut instead of peanuts.) I have it for lunch on "Indian tacos"--vegetables stir-fried with Indian spices on whole wheat tortillas dressed with yogurt and green chutney. Then the next day I puree the leftover vegetables with water and a spoonful of green chutney to make soup for dinner. Delicious!
