Flavorful Beef Stir-Fry

Rosemary Ranch Chicken Kabobs

This was pretty good but was lacking a little zing. It did keep the chicken super moist and was easy to prepare. I found it was a little oily and it tasted like there was a weird coating. Perhaps if I cranked up the flame on the grill, it would have been a little crispier but I didn't want to overcook and dry them out. I think I would cut the oil a little bit and either marinate longer or add something extra to spice it up.

Kelsey's Favorite Stuffed Green Peppers

Not bad... First of all, with the amount of filling it makes, it should call for about 6 peppers, not 3. The filling does need more flavor so I would add more spices next time. I did add extra sauce and I'm glad I did because it would have been too dry for us. I also blanched the peppers for about 3 minutes and cooked them once filled for about 30 and that was a good amount of time. I used red peppers since I prefer them over green. Sweeter and delicious!

Chocolate Trifle

This was pretty good but I thought with all of the great reviews, I would have liked it more. I usually just layer the chocolate cake, prepared sugar free chocolate pudding, cool whip and toffee bits and my husband said that he likes my version better. I did make my own whipped cream for the mousse layer so between that and the condensed milk, it added a ton of calories. I think I'll stick to my version.

Spinach Cheese Manicotti

I used shells instead of manicotti but that shouldn't matter. The problem I had was that I cooked it almost an hour and the noodles were still a little crunchy. My husband thought they were supposed to be that way and liked it. LOL Until the next day when the dish has been refrigerated for several hours, probably soaking up the moisture, the noodles got softer and were better when reheated. I'm not sure if I'll cook them even longer next time or precook the noodles. Otherwise, a good recipe. Very tasty!

Strawberry Angel Food Dessert

I'm sure I won't say anything new here but I made this for a BBQ and everyone loved it. I followed the advice of the poster that made the glaze with strawberries, sugar and lime juice and it was great. I also substituted Splenda for the sugar in the cream cheese layer to cut down the calories and sugar since some of our family has diabetes. I topped it with extra Cool Whip and strawberries and it was a hit! I made it the night before and loved how the angel food soaked up the juices. YUM!

Glazed Meatloaf II

We don't eat meatloaf often and I usually make the Lipton soup meatloaf recipe but wanted to make something different. We loved this recipe! I didn't have bread or dry mustard but as another person suggested, used the rolled oats and regular mustard. I wasn't sure if I was supposed to use old fashioned or quick cooking. Had old fashioned on hand so I used that and it seemed to work OK! Doubled the sauce as someone suggested. It might have been a little overkill so I may not double it next time. Will make again!

Chicken Breasts with Balsamic Vinegar and Garlic

We really liked this recipe. I used baby bellas and near the end, I thickened the sauce with a little cornstarch because we don't like thin sauces as much. It thickened right up! I would probably double the sauce next time because we like extra sauce. Will make again!

Cranberry Orange Loaf

I made 3 of these for Christmas and only have the comments from ours to review. One person froze hers for later and another hadn't tried it because there was so much other food. Ours sat in the fridge for almost a week because of the same reason. Despite the fact that it was starting to get dry after days of neglect, it was delish! I will definitely make it again...and not wait so long to eat it next time!

Mediterranean Chicken

Had to use dried seasonings because that's what I had. Next time, I would probably use oregano instead of thyme since I'm not big thyme fan. Also used canned diced tomatoes since it's the winter...and hey, it's easier! Also added some artichoke hearts. Delish! I'll be making again, I'm sure!

Spinach and Leek White Bean Soup

I'm doing WW and saw how low in points this would be so I decided to try it. I made the soup as directed because I don't like when people rate recipes and make tons of changes and then say they didn't like it. Sorry but I didn't like this soup. There isn't enough broth to actually make it a soup so based on someone's recommendation, I would have added at least another can of broth but I had already put in my only 2 cans. As for the cumin, I felt like I was eating dirt. I guess I'm not a cumin fan but I didn't know what else so use as a substitute. Someone had mentioned rosemary but that didn't sound appealing to me. Maybe I would try basil and make it an Italian soup!

Olive Chicken II

Made this for my parents' last night to rave reviews! My chicken cooked super fast so I had to take it out, boil the sauce to reduce it and thicken it up with a little cornstarch. Unfortunately, I reduced it a little too late and didn't have the amount of sauce I wanted but it was still a winner!

Marshmallow Icing

After reading the reviews, I think I expected to love this more but I thought it was just "pretty good". I made my son's first birthday cake and decided to use this frosting. I thought it held up well because I kept the cakes in the fridge due to the screaming hot weather but thought it had a grainy taste to it....maybe from the marshmallows? I didn't think that would happen since you have to cook the sugar so I'm assuming it's from later adding the marshmallows. I think next time, I'd try another recipe.

Cabbage Roll Casserole

I made this because I grew up eating a lot of Greek/Mediterranean foods and missed being on the east coast where it's much better than here in CA. I didn't think my husband would like it but he now requests it at least once a week! I do add a little extra tomato sauce because we like it that way. Also had to add a little time....and this recipe makes a ton of food! I don't know who can fit it all in that pan but I have to use a big lasagna pan. He's now asked me to double the recipe....can you tell he loves it???? Enjoy!

Spinach Quiche

Very tasty! I didn't know what to expect using cottage cheese but since I had a tub of it in the fridge, I thought I'd give it a try. I didn't have green onions so I used yellow and my cheese was actually a cheddar/monterey jack mix. I left the croutons off and didn't use a crust to save on the carbs and it turned out very well! Next time, I'll add more spinach because I want to make it more dense. Thanks for the recipe!

Grilled Salmon I

My husband loved this...his only request being that I marinate it longer. I was short on time. I didn't have garlic powder so I just crushed some garlic and threw it in the marinade. I'm not a salmon fan but this did the trick since his doctor said that he must cut back on the red meat! Thanks for the recipe!

Citrus-Basil Vinaigrette

I thought it was light and refreshing although I thought it was lacking flavor. I thought there was too much oil at first so I added more orange juice. I think it needs something but I'm not sure what. I put this on a mixed green salad with orange segmants and roasted pecans.

Chicken Pesto a la Lisa

Sorry but I have to give this a thumbs down. Even with the sauce, the chicken was lacking flavor. I had put some salt and pepper on it when I was cooking it but it was pretty flavorless. My husband, who is not very picky, gave it an "eh". My suggestion is seasoning the chicken before cooking it.

Marinated Greek Chicken Kabobs

Thought it was good, but not great. I marinated whole boneless breasts overnight and grilled them. I didn't want to make kabobs. I guess I thought the feta taste would be stronger. I'm sure when I cut it up and put it in my salad, it'll be good. Would I make again? Probably not but glad I finally tried it.
