Clark's Quiche

I'd actually give this 4.5 stars but that's not an option. I definitely like the taste but I'm not fond of the layering. I made it crustless and although I squeezed the water out of the spinach pretty well, it was still too liquidy but that may have been due to the mushrooms also. It would have been much better (personally) if everything was mixed together. Didn't like the solid layer of cheese at the top that after cooling and reheating, became it's own layer. I will try it again making adjustments!

Italian Easter Cookies

REVISED REVIEW: Growing up Italian, I've eaten these kind of cookies for decades. The cookie part is good but the frosting has too much butter. Usually, there's either no butter or very little. Without all of that butter, it's easier to frost and looks nicer. I'm going back to using no butter but the cookie part is still tasty. Also, when it's warm, the butter in this frosting softens up (especially when you try to store them in a container) and they become a sloppy mess. Typically, the recipe calls for just confectioners sugar, a tiny bit of milk, some extract and the food coloring. For those people who say the cookie is bland, it's not meant to be super sweet because it's meant to be frosted with the icing that is sweet. If the cookie was too sweet, you'd be complaining that the frosted cookie was way too sweet. It's a nice balance. You can really use any extract you want to but usually it's anise, vanilla or lemon. You can see my pic attached. It was voted one of the top photos today!

Chili I

This was good for a quick and easy chili with not a ton of ingredients. I had to make due with the ingredients I had on hand but it still all worked out. Didn't need to use salt due to the sodium content in the canned beans/tomatoes. Will make again!

Key Lime Pie VII

Everyone loved this recipe but I thought it was a little bit on the sweet side. This took longer than I thought because it took so long to squeeze all of the limes. Other than that, an easy recipe. I actually made it in a square Pampered Chef pan because the only pie plate I had was too small and then I cut it into squares.

Slow Cooker Beef Stew IV

We did not like this. Had to add more soup mix due to lack of flavor. It didn't help that I bought grass fed organic beef which has less fat, making it more tough but we didn't like the flavor of the sauce so I'll be moving on.

Vegetarian Chili

Not bad. I didn't make it vegetarian. I chose this recipe because of the small list of ingredients that I had on had. I have a favorite from this site but that one takes much longer and it's a long list of ingredients and steps so for something quick, it did the trick.

Favorite Old Fashioned Gingerbread

I doubled the spices as others suggested and although the taste was great, I found that it dried out pretty quickly which I don't find when I use an oil based bread recipe. Maybe I can substitute oil next time.

Cheesecake Cookie Cups

We all liked these but even though I followed the directions as written, I think I would lightly spray the cups next time. The cookie stuck at the bottom and we actually had to scrape it out of the cup with our teeth! I haven't read every review, only the top rated but didn't see anyone mention that as a problem. Maybe I'll try the ones with Nilla wafers and see if those are easier to get out. Nice dessert idea though. Hadn't made them in years!

Banana Sour Cream Bread

Not sure what it was but this reminded me of when people use banana extract to make banana bread. Was it the sour cream? Regardless, our favorite remains Banana Crumb Muffins (from the site that I make into a loaf). It's not a bad recipe, just not our favorite. This batter barely fit into my KitchenAid. It was up to the top. Nice that it makes 4 loaves but I wouldn't bother attempting again since we have our favorite on here.

Chicken, Garlic, and Sundried Tomato Pasta

Thought it was just OK. Not a huge fan of using cream of whatever soup but was looking for something fast. My son was not a fan. Maybe the suggestion of others using some white wine might make it better. Otherwise, I probably won't make it again.

Pumpkin Gingerbread

This is delish! I usually make the Downeast Maine Pumpkin bread...also delish...but wanted to try this one. They are very similar except this one has a little bit more spice and a tiny bit of baking powder. Since I haven't made the other in a year, I can't say which I like better but both are exceptional so you can't lose! I tried making this in a tube pan....oops...too much batter and it came out monster size. I could have made it in two pans. For the holidays, I'll be making them in smaller pans. This is a no fail gift that everyone loves every year. Highly recommended!

Apple Crisp II

Always a winner! I made a little bit of extra topping and did add a little bit of nutmeg. I did mix the apples (Granny Smiths) with the cinnamon/sugar mixture and then put the topping on. Also, didn't melt the butter, just cut chunks working it into the topping mixture. Everyone always loves it so this is my standard crisp recipe. Great served warm with vanilla ice cream. Highly recommended!

Fluffy Pancakes

Another homemade pancake...another "eh" for me. Added blueberries because those are my favorite! Can't seem to find a pancake from scratch that I like. These were OK, just not "to die for". As stated in another review, I am a Bisquick fan and those are "no fail" for me so I'm looking to find a recipe that I love that's not a processed product! I'll continue my search...

I'm not sure what the problem was. I followed the directions exactly but found it was way too much butter. It came out greasy and it was so bland...even with the confectioners sugar and some lemon. Will have to tinker with it, I guess. We get these every time we go to the pancake house and theirs seem much sweeter. Maybe add some sugar to the batter?

Best Chocolate Chip Cookies

These were fabulous and might be my go-to recipe now! I did take the advice of others and added the little bit of cream of tartar, and reduced the white sugar to 1/2 c and increased the brown sugar to 1 1/2 and then because I was giving these away, wasn't sure about everyone liking nuts so I left them out. Good thing since one person had an allergy. I got a lot more than 24 so I must have made them too small. Had to leave them out 1/2 the day due to rushing to the party and they were still super moist. On last thing, instead of all semisweet, used about 1/2 c white chocolate. They came out great!
