Cake Balls

Reviewed: Mar. 17, 2012
I'm with the rest of the negative reviews. I don't get it. Followed the instructions using a tub of cream cheese frosting and refrigerated overnight. They were still mushy. I didn't even bother doing the chocolate coating. I didn't want to waste it because I new from the taste of the rest that there were not worth it. I've seen recipes with cream cheese instead of the frosting. Maybe those might be better? Glad I didn't make and send them to my son's school.

Master Pizza Dough

Reviewed: Mar. 10, 2012
Didn't have the rapid yeast so followed the instructions for the regular one and used the herbs in the crust. Thought it was pretty good. It was a little bland so next time I would add more salt and maybe a little sugar/honey. I made it a little thicker than I wanted so next time, I would use a bit more than half for thin crust.

Baked Ziti II

Reviewed: Jan. 14, 2012
This was a crowd pleaser. I did use 32 oz of ricotta, two eggs and added some cooked chopped spinach. Mixed the parm into that mixture. Needed some salt and pepper. I layered the ricotta mixture in between two pasta layers that I had mixed with the sauce and since I had some meatballs frozen with the sauce, I sliced those and put those in there. My guests really loved it and it made enough for a small army!

Fluffy French Toast

Reviewed: Jan. 9, 2012
I will preface this by saying that my boys demand the German Pancake on Sundays so getting them to try this was work! I made this using a Panettone that I had bought for Christmas and it was delish! We aren't huge french toast fans but this will be my go-to recipe when I do make it. Try it with Panettone!

Cranberry Pistachio Biscotti

Reviewed: Dec. 19, 2011
We love this biscotti the best. The only change I make is to use 1 cup each of cranberries and pistachios. I think as written, it would be too many nuts for us.

Gingerbread Biscotti

Reviewed: Dec. 19, 2011
I had few changes. I had to use all white flour due to an allergy to whole wheat and not sure if the sub is actually 1:1 but that's what I did. I didn't follow directions and made into one log due to the fact that I wanted long biscotti. My own error was not baking longer because part of it was undercooked. Not so bad when you have to bake two more times but it made it harder to cut without chunks coming out and still maintain a nice looking cookie but that was my error. The reason for the 4 stars is because it needs more spices. It was a pretty bland gingerbread and needed more of a kick. Would make again with more spices.

Saltine Toffee Cookies

Reviewed: Dec. 19, 2011
We thought this was pretty good but I think I would make more of the toffee next time. I needed a little more than a ream of crackers to cover the bottom of the pan and the toffee didn't cover to the edges. Someone said it would spread the the edges and I think it did a little but but not enough. I liked the taste but not that I could totally tell that it was toffee on top of saltines! Next time, I would crush the crackers or not use them at all. I think I would also prefer milk chocolate to semi-sweet. With a few changes, I think it could really be something I'd make again.

Best Ever Popcorn Balls

Reviewed: Oct. 31, 2011
Really liked these! As other suggested, I added about 1 1/2 tsp vanilla and oiled my hands before rounding them into balls. Because I made them a little bit on the smaller side, I was about to do about 30 for my son's Halloween party but a bigger one would certainly do 20 as stated. I didn't find them too sweet. I did break up the batches in 1/2 so it would be easier and was a little light handed on the first batch with the sugar mixture so I probably put a little bit too much on the second batch but I'm sure they're still great! Would make again but doing them by myself took hours since I wanted them to look pretty for the class.

Chocolate Banana Bread

Reviewed: Oct. 17, 2011
I think I was expecting it to be more chocolaty. If I was blindfolded, I would guess banana bread with chocolate chips. It was good but I would add more cocoa next time.

Angela's Awesome Enchiladas

Reviewed: Sep. 27, 2011
My husband RARELY gives a 5 rating but did for this recipe! Technically, these are burritos because of the flour (not corn) tortillas but since burritos are my fave anyway, doesn't matter to me! I didn't have the green chilies, the garlic or onion powder so I had to leave those things out but it was still great. My 5 yr old wasn't keen on it but my husband and I loved it. My husband thought it wasn't spicy enough but it was plenty for me without those chilies. It's hard pleasing everyone when it comes to anything spicy. Will make again!

Smelled great but the flavor was not very strong. I admit that I omitted the liquid smoke because I hate the taste. Disappointed.

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Reviewed: Aug. 29, 2011
I really liked the cake but with the frosting, some said it was "too chocolaty"....if that's possible! Next time, I would just use another frosting. Even I thought it was a little intense and that's rare!

Greek Orzo Salad

Reviewed: Aug. 7, 2011
Made this for a BBQ/birthday party and thought it was pretty good but not my favorite. I think the red onions are a little strong for my taste. I don't do canned olives but used kalamata and rotini instead of orzo. Because I think I added extra pasta, I did add more of the juice from the marinated artichokes (we buy the big Costco jars so I had plenty) but it was still a tad dry.

Clark's Quiche

Reviewed: Jun. 10, 2011
I'd actually give this 4.5 stars but that's not an option. I definitely like the taste but I'm not fond of the layering. I made it crustless and although I squeezed the water out of the spinach pretty well, it was still too liquidy but that may have been due to the mushrooms also. It would have been much better (personally) if everything was mixed together. Didn't like the solid layer of cheese at the top that after cooling and reheating, became it's own layer. I will try it again making adjustments!

Italian Easter Cookies

Reviewed: Apr. 22, 2011
REVISED REVIEW: Growing up Italian, I've eaten these kind of cookies for decades. The cookie part is good but the frosting has too much butter. Usually, there's either no butter or very little. Without all of that butter, it's easier to frost and looks nicer. I'm going back to using no butter but the cookie part is still tasty. Also, when it's warm, the butter in this frosting softens up (especially when you try to store them in a container) and they become a sloppy mess. Typically, the recipe calls for just confectioners sugar, a tiny bit of milk, some extract and the food coloring. For those people who say the cookie is bland, it's not meant to be super sweet because it's meant to be frosted with the icing that is sweet. If the cookie was too sweet, you'd be complaining that the frosted cookie was way too sweet. It's a nice balance. You can really use any extract you want to but usually it's anise, vanilla or lemon. You can see my pic attached. It was voted one of the top photos today!

Chili I

Reviewed: Apr. 12, 2011
This was good for a quick and easy chili with not a ton of ingredients. I had to make due with the ingredients I had on hand but it still all worked out. Didn't need to use salt due to the sodium content in the canned beans/tomatoes. Will make again!

Key Lime Pie VII

Reviewed: Mar. 27, 2011
Everyone loved this recipe but I thought it was a little bit on the sweet side. This took longer than I thought because it took so long to squeeze all of the limes. Other than that, an easy recipe. I actually made it in a square Pampered Chef pan because the only pie plate I had was too small and then I cut it into squares.

Slow Cooker Beef Stew IV

Reviewed: Feb. 20, 2011
We did not like this. Had to add more soup mix due to lack of flavor. It didn't help that I bought grass fed organic beef which has less fat, making it more tough but we didn't like the flavor of the sauce so I'll be moving on.

Vegetarian Chili

Reviewed: Feb. 7, 2011
Not bad. I didn't make it vegetarian. I chose this recipe because of the small list of ingredients that I had on had. I have a favorite from this site but that one takes much longer and it's a long list of ingredients and steps so for something quick, it did the trick.
