Mexican Pasta

This was really good! I was a little worried because it sounded like an odd mixture of ingredients, but it turned out well. It was also very colorful ~ it would be a pretty dish to bring to a potluck dinner.

Awesome and Easy Creamy Corn Casserole

I doubled the recipe and baked it in a 9 x 13 pan for 1 hour 5 minutes. It was so good - I got a lot of compliments on it at the party I took it to.

Buffalo Style Chicken Pizza

I used frozen cubed chicken and Texas Pete buffalo sauce. Hubby was a little skeptical, but we ended up loving it! Next time, we are going to buy breaded chicken strips to cut up and add a little wing sauce to the blue cheese.

Beefy Manicotti

We thought this was really good, although I used jarred spaghetti sauce to save time. I also used a full pound of ground beef, beat the egg before adding it, and added a little sauce to the filling because it looked a little dry. My husband thought there were too many onions, so I'll use a half of an onion next time. I froze the extra filling to use another time.

Brown Sugar Chops

Zucchini Pineapple Bread I

I did not have any nutmeg, but this still turned out great. It was very moist and delicious with cream cheese spread on the slices. I put it in mini loaf tins, cooked it for 25 minutes and it turned out perfect.

Broccoli Casserole I

I used cream of celery soup instead of mushroom soup because my hubby hates mushrooms. It was very good. It makes a lot - I had 7 people eating off of it and still had leftovers.

Hot Corn Dip

My guests were a little skeptical at first because of all of the corn, but it was so addictive! It needs a little 'kick,' so next time I may add hot sauce and maybe some sharp cheddar cheese.

Beer Butt Chicken

We substituted coke for beer (there was only one beer left in the fridge and hubby didn't want to sacrifice it!). It smelled so good cooking. The chicken was very moist and held a lot of flavor.

Tartar Sauce I

My husband made catfish last night and we didn't have any tartar sauce. I whipped this recipe right up and it tasted great! It'll probably taste better after being refrigerated overnight so the flavors will blend. No more store bought tartar sauce for me either.

Grilled Gyro Burgers

These were so good. The burgers were very moist and had a great flavor. I served them on hamburger buns because of all of the reviews of the pita bread falling apart and just spooned the sauce over the burgers.

Cottage Cheese Chicken Enchiladas

These were very tasty. They fell apart easily after they were cooked so they didn't have a great presentation. I have a lot of filling left over and I used 10 6" tortillas, so I may halve the filling recipe next time.

Broccoli Casserole

My mom made this for Christmas dinner and it was so good! She chopped up the broccoli very fine after cooking it. This recipe makes more than 12 servings - we had 10 adults eating it and still had some left over.
