Zucchini Pineapple Bread I

Reviewed: Jun. 26, 2004
I did not have any nutmeg, but this still turned out great. It was very moist and delicious with cream cheese spread on the slices. I put it in mini loaf tins, cooked it for 25 minutes and it turned out perfect.

Broccoli Casserole I

Reviewed: Jun. 21, 2004
I used cream of celery soup instead of mushroom soup because my hubby hates mushrooms. It was very good. It makes a lot - I had 7 people eating off of it and still had leftovers.

Mango Shortbread Bars

Reviewed: Jun. 7, 2004
I only had one mango, so I haved the recipe and baked it in an 8x8 inch dish for 30 minutes. It's very good. I love the combo of spices on the mango.

Chicken Spaghetti II

Reviewed: May 25, 2004
I don't know if I did anything to mess this recipe up, but I followed the directions exactly and it was a big, goopy mess. It tasted okay - almost like cheese/rotel dip with noodles, but it wasn't very pretty and very gooey. Maybe the noodles were overcooked. We just ate a couple of bites.

Hot Corn Dip

Reviewed: May 10, 2004
My guests were a little skeptical at first because of all of the corn, but it was so addictive! It needs a little 'kick,' so next time I may add hot sauce and maybe some sharp cheddar cheese.

Beer Butt Chicken

Reviewed: May 5, 2004
We substituted coke for beer (there was only one beer left in the fridge and hubby didn't want to sacrifice it!). It smelled so good cooking. The chicken was very moist and held a lot of flavor.

Tartar Sauce I

Reviewed: Apr. 28, 2004
My husband made catfish last night and we didn't have any tartar sauce. I whipped this recipe right up and it tasted great! It'll probably taste better after being refrigerated overnight so the flavors will blend. No more store bought tartar sauce for me either.

Raspberry Vinaigrette Dressing

Reviewed: Apr. 25, 2004
This is a very good dressing. It is sweet and tangy at the same time. I used the full amount of sugar and it was fine.

Grilled Gyro Burgers

Reviewed: Apr. 13, 2004
These were so good. The burgers were very moist and had a great flavor. I served them on hamburger buns because of all of the reviews of the pita bread falling apart and just spooned the sauce over the burgers.

Pork Chops with Blue Cheese Gravy

Reviewed: Apr. 3, 2004
This was pretty good. The sauce was very thin - I'll add flour or corn starch next time to thicken it up. The blue cheese flavor was very strong for those who don't like blue cheese.

Cauliflower Casserole

Reviewed: Mar. 23, 2004
We thought this was good and did not have the problem of butter pooled on the bottom of the dish like other reviewers did. I am going to omit the salt next time and maybe use a different cheese. It didn't melt well and kind of dried to the top of the casserole.

Greek Chicken

Reviewed: Mar. 23, 2004
This was a great recipe! I used chicken breasts and due to a change in dinner plans, they marinated for 2 days. I baked them at 350 for about 45 minutes and they were so juicy and had a lot of flavor.

Cottage Cheese Chicken Enchiladas

Reviewed: Mar. 10, 2004
These were very tasty. They fell apart easily after they were cooked so they didn't have a great presentation. I have a lot of filling left over and I used 10 6" tortillas, so I may halve the filling recipe next time.

Cheesy Tuna Melts

Reviewed: Mar. 6, 2004
This was just ok. At 3 minutes, my cheese had burnt and I had to peel it off, so be sure to check on it often!

Quick Gnocchi

Reviewed: Feb. 9, 2004
These turned out much better than I thought they would. They were a little doughy and not very pretty, but I think I could have solved that by putting more flour in.

Cheddar and Onion Soup Chicken

Reviewed: Feb. 5, 2004
This was pretty good. The chicken was very moist and tender. I added Italian seasoning to the flour and used less cheese because it seemed like it would be too greasy with 2 cups. If I make it again, I will use less water and soup mix too.

Lemon Sauce for Salmon Patties

Reviewed: Jan. 29, 2004
I used this sauce on some salmon patties and it was very good. It would work well for all types of white fish.

Potato Salmon Patties

Reviewed: Jan. 29, 2004
These were okay. They were too fishy tasting for me and my husband wasn't overly impressed with the flavor. I added a couple dashes of hot sauce to it and made the Lemon Sauce for Salmon Patties recipe from this site. I had to put a ton of sauce on them to eat them.
