Awesome Slow Cooker Pot Roast

I changed it a bit. Used 2 packs of onion soup mix. Browned the meat, peppered it and deglazed with red wine. Pouring all the drippings in the pot. Added some carrots, onions, and red potatoes. I added some paprika, and pepper at the last minute before serving. The gravy was not quite thick enough as it came out, so I thickened with some corn starch in a separate pan, but the gravy was delicious. Maybe would use less water next time? Not sure. It was superb though. Flavorful. Tender. Perfect. Will make this from now on as my recipe.

Taco Salad III

This version of a taco salad was super tasty. I love the Catalina dressing- it is the first time I tried it on a taco salad- and it really really worked! I have made this with chicken, ground turkey, and ground beef. I usually add more veggies also- such as carrots, bellpepper, mixture of lettuces (spinach, green leaf), lots more avocado, etc. I also used less cheese, and added a small dollop of sour cream.

Thai Green Curry Chicken

I always tweak this a bit: -I add a bit more ginger, to taste. -**More veggies- depending on what I have including: squash (which needs to cook the longest), broccoli, carrots, onion, red bell pepper, mushrooms, etc. -More curry paste, to taste. -**1 can coconut milk to taste. -**About 1/2 cup chopped up basil, added before serving to each bowl individually. -LESS fish sauce (about 1 teaspoon). Less soy sauce (about 1/4TB). I serve over coconut or cilantro jasmine rice.

Cobb Salad

This is a great base for a cobb salad. -I use different lettuce than iceburg, usually green leaf or a mixture of a few. -I also use WAY more veggies: carrots, broccoli, frozen peas thawed, cauliflower, red bell pepper, mushroom, red onion, zuchini, cucumber...etc. - I either use ranch or homemade thousand island dressing. - I also use homemade croutons (baking cut up & seasoned bread with olive oil for about 10 minutes) -I sometimes add sunflower seeds and some chunks of good cheese.

Steak Chili

SUPER GOOD! I tweaked it a bit, but the original recipe looks just as good, I just modified for personal taste: - I used some garlic powder, more cayenne to taste, fresh ground black pepper, more chili powder, 1/2 a fresh jalepeno, some dried mexican oregano, and about 1/2 tablespoon chipotle peppers in adobo sauce. - We served with pepperjack and cheddar cheese, fresh onions, fresh cilantro and tortilla chips.

Tuna Noodle Casserole from Scratch

This was a good base, but I changed a few things. -I didn't add any salt, and decreased the butter significantly. I only used about 2.5 TB butter- 1/2 a cup is so much! I used olive oil to saute the onion & celery instead of butter and to oil the dish. I only used the butter for the cream sauce (instead of 4 TB I used about 2) and I used about 1/2 a TB or a little more for the breadcrumbs. - I added some more veggies. I just used what I had on hand: carrots, red bell pepper. - I added some seasonings including black pepper, oregano, basil, and cayenne pepper.
