Curried Chicken and Rice Salad

Very easy and very good. I used plain yogurt (not low-fat) instead of the sour cream, and added a little more mayo. I used chopped red and green peppers instead of celery, and added chopped cashews instead of pine nuts. Yum!

Apple Crisp II

This is pretty much a standard apple crisp. Definately use granny smith apples. I used about 6 apples, 1/2 the white sugar and 1/4 cup lemon juice instead of the water. Also added some nutmeg in addition to the cinnamon. Tasty and easy.

Spicy South Of The Border Spinach Cheese Dip

Great recipe - I make it all the time. I use 1 can of chiles and 1 can of spicy Rotel (drained) instead of tomatoes. I use a full cup of half n half - otherwise the dip is too thick.

Chicken Enchiladas V

I make this all the time now. I add one can of red enchilada sauce to 3/4 can of cream of chicken soup. Then add a few scoops of sour cream. I also cut my chicken into small pieces and sprinkle with taco seasoning before baking (wrap in foil). Excellent, easy recipe!

Belle and Chron's Spinach and Mushroom Quiche

I love this quiche. I use a package of frozen spinach, 1/4 cup chopped onions, and handful of chopped mushrooms. I use about 3/4 cup of heavy cream. I saute the onions and mushrooms for a few minutes using a small amount of the leftover bacon grease. It makes enough for one deep-dish pie crust (with a small amount leftover). Mine cooks for about 45min.

Creamy Chicken Salad

Delicious and easy!! I used dried tarragon - a pinch or two. With salted snokehouse almonds there was no need to add salt.

Pecan Pie V

This recipe is fantastic - Never make the Karo Syrup recipe again! I'm disappointed I didn't have this recipe years ago - it is infinately better than the standard corn syrup recipes, and just as easy. This recipe tastes more like real pie, instead of like candy. I also recommend using Mrs Smith's deep dish pie crusts instead of the cheaper lard crusts - it bakes better. Warm the eggs to room temp before making this recipe - will keep the butter from clumping when you add it to the eggs.

Butternut Squash Soup

This recipe is fantastic! Very easy too. I used two regular sized butternut squash, baked them at 425 for 35 minutes. I also used 3 cups chicken broth and 1 package neufchatel cheese. It all fit in my blender perfectly so I only had to puree one batch.

Mrs. Sigg's Fresh Pumpkin Pie

Loved this recipe! I bought evaporated milk instead of condensed, so I was looking for a recipe that used it. This one will replace my old one, it is very easy! I used cinnamon, ginger and nutmeg instead of pumpkin pie spice. I also cooked the pie crust for 10 minutes first.

Flourless Peanut Butter Cookies

I didn't like these cookies enough to make them again. I used natural peanut butter (no sugar added) and used 1 Tbs flour and added 1/2 tsp vanilla. The flavor was ok, but the consistency was off. I could never tell if they were actually cooked.

Bread Crust Zucchini Quiche

I have tried this recipe several times and each time, the bread on the bottom of the pan stays mushy. Not a bad flavor, but soft bread doesnt seem to work for a crust.

Addictive Sweet Potato Burritos

I make this recipe all the time - it's become a staple in my household. Wonderful! I would recommend using a potato masher to mash the beans, as this is the most time-consuming part. I also scale the recipe down to make 5 burritos (1 can beans, 1 can sweet potatos, 1/4 onion).
