Curry Tuna and Rice Casserole

A very tasty tuna casserole! I would recommend you try may become part of your staple menu. I had to modify my version of this recipe but had near stellar results: I did not have cream of celery so I used cream of chicken (isn't tuna the 'chicken of the sea?'); and I did not have milk so I used 'A Taste of Thai' coconut milk. I backed off on the amount of onion (like the flavor of onion, but it is the gift that keeps on giving) while adding 7 ounces of green peas and some grating of cheddar cheese on the eggs. A fairly easy dish that does not take a lot of time or effort to concoct. Thanks to chef who contributed it!

Spicy Sweet Potatoes

My guests loved this dish! So simple to make. My modifications were the result of not having enough sweet potatoes: I had to use one large red potato (with skins) which did not disrupt the dish's flavor (may have added some eye appeal). I also lacked the cayenne pepper so I substituted chili pepper (cayenne would have added a little more 'heat' to the dish which I would have liked). I must admit I liberally greased the pan with butter!! Yum yum... My wife wants me to make it for her and my daughter again, and soon!

German Spaghettini

I made this to appease the meat lovers in my family. To lower the fat content I used ground chuck, turkey Italian sausage, and reduced fat bacon. 2 tablespoons of diced onion sauteed with meat. I did precook the bacon, but not to a crispy state. I used fire-roasted tomatoes, and a thicker tomato sauce. Sugar was reduced significantly with no detriment to outcome. Followed cooking times and temps to the letter. I received many compliments on this dish. Personally, I felt the bacon flavor was more powerful than it should be. Still, I had a second helping. I am looking forward to my leftovers!
