Chef John's Tomato Sauce

Reviewed: Dec. 31, 2014
I will give this a 4 star. I at first didn't care for it much as I was wanting something more tangy. But I let it sit in the fridge and then made some meatballs and it was excellent with that combination. This may eventually grow to a five star when I make it again. Made it exactly per the recipe except I couldn't find those kind of canned tomatoes and had to improvise with other canned tomatoes.

Beef and Guinness® Stew

Reviewed: Dec. 14, 2014
Tasted good to me but unfortunately I didn't have anyone to try it out on as my kids wouldn't try it. Made it as detailed although I cooked it in an stock pot which I think I should have added more cook down time. Next time I think I will add more carrots. Looks and tastes good.

Alabama Fire Crackers

Reviewed: May 25, 2014
Served this at a graduation party. I had several that asked about the recipe or commented on it. I made it to the recipe. I think some tweaks may be different kinds of oil or using an Italian salad dressing mix instead of ranch.

Jay's Jerk Chicken

Make it per the recipe except I used chicken leg and thigh quarters. Delicious to me and five star. My family liked it too but not as much as me.

Chef John's Barbecue Chicken

Reviewed: Mar. 22, 2014
Really liked this and will use it again. Did it per the recipe and video other than I used leg and thigh quarters. My only adjustment I will make the next time is to cook the skin side down longer and at slightly lower temp. I didnt cook it long enough and then my fire was so how that the bottom no skin side burnt even with no barbecue sauce applied. The part eaten was delicious and moist and a different flavor that I attribute to the vinegar.

Brooke's Best Bombshell Brownies

Reviewed: Feb. 6, 2014
It was a good brownie, not a great one. Not one that I would take to a party. It seemed a little dry to me. Not sure if I did something wrong but not what I expected. Mine didn't come out chewy and fudgy and I followed the recipe.

Mulligatawny Soup I

Reviewed: Feb. 1, 2014
I found this better than I expected. I too made some changes out of necessity on what I had at the time or because I didn't want to waste something. I used 1 cup each of carrots, celery and onions. I had a leek getting old so I used about a third of that. I doubled the curry out of suggestions from the other reviewers. I used one whole granny smith apple. To my surprise I like the small chunks of apple in this recipe and wished I had more apple in there. Pleasantly surprised by this recipe. My chicken was dark meat because that is what I had. Its good without the cream, but I liked it with cream even better. Its a keeper and if I had a restaurant this one would be on the menu or on the soup bar.

Chris' Chili

Reviewed: Jan. 19, 2014
Easily 5 star for me. The problem with chili is that people are so opinionated and/or polarized on what is chili and how it should taste and look that scores can be so subjective than other recipes. It even becomes a macho thing in some cases to be rigid on a chili concept. I found this Chili just what I was looking for in a chili. Similar to a Steak and Shake Chili but better. The steak was what made it texturally so different. The beans were so tender and the flavor was just right. I used Coke and Texas Pete's. I did not find the dry onion soup mix so I used Campbells french onion soup and strained out those disgusting onions. I made it to the recipe except the store was out of dry soup mix. I used 10 ounces of sauce instead of the 8. Changes I may try the next time would be to find the dry onion soup mix as listed, double the Texas Pete's or use Franks red hot sauce.

Easy Greek Yogurt Cucumber Sauce

Reviewed: Jan. 6, 2014
Loved this one and it tasted like my favorite Greek restaurants sauce. I have no idea if its authentic or not, but was what I was looking for. I did make some changes. 1. Since we were having Greek salad with Feta, I eliminated the Feta and probably wont add it ever. 2. I used a English cucumber and grated it. 3. I added some dill

Rosemary-Scented Pork Loin Stuffed With Roasted Garlic, Dried Apricots and Cranberries and Port Wine Pan Sauce

Reviewed: Dec. 28, 2013
I do a quicker version of this too. Cut slits in roast, cook the garlic in oil, fill slits in meat with dried cranberries, add the oil in slits and all over. Salt the outside heavily, add the broth in the pan and cook low and slow.

Parmesan Brussels Sprouts

Reviewed: Dec. 27, 2013
I gave this a 5 star for brussel sprouts seperate from my other ratings. This veggie has to be one you like and if you do I would rate this a 5 as it works with well with it. If you dont like the taste of BS then forget it. Only changes I made was a drizzle of olive oil with the butter and then I drizzled a little over them when done.

World's Best Peanut Butter Fudge

Reviewed: Dec. 21, 2013
This was good but it just lacked that certain something that I remembered from my moms and me being a little kid. Either its not as good or my memory is just made them better. My kids all like this, but I still feel there is a better one out there.
