Chicken Honey Nut Stir Fry

I had this dish tonight for dinner and was thrilled with how it turned out. Per someone's recommendation, I added in 1/2 of both a red and green pepper as well as some sliced mushrooms. I also added two tablespoons of a store brand Orange Citrus Marinade to give it some extra zip. The result is one happy customer... thanks for sharing!

Broccoli Casserole I

I made this for my boyfriend and I one evening. It was FABULOUS. Easy and delicious. I used fried onion rings as a topping (I believe they are made by French's...). Quite tasty.

Mexican Layered Dip

I made this for a work party that I went to... it was a HUGE hit... I got a lot of good comments on it. My mom used to make this when we went to parties but the taco seasoning mix addition was new to me. I added salsa instead of tomatos and layered the bottom with shredded lettuce.

Awesome Honey Pecan Pork Chops

WOW. Talk about scrumptiously sweet! I loved it - so did my boyfriend! I added a tad more butter to the honey mixture in the pan as I was left with no extra drippings. I will definitely make this again!

Tuscan Soup

Oh WOW. This soup was amazing! And SO quick! I felt like a pro after making it! I used maple sausage as it was all the store had at the time and half and half as recommended. The maple sausage gave it a fabulous flavor and it wasn't even real spicey! I strongly suggest sprinkling with freshly grated parmasean for an even greater effect. Enjoy!

Cream of Fresh Tomato Soup

I made this soup tonight and, as others recommended, I blended the tomato and onion mixture and used cream instead of milk. It was okay but I found that it seemed to be missing something. Not sure what though... but it has potential.

Mama's Best Broiled Tomato Sandwich

This was just FABULOUS. Light and perfect for summer... my boyfriend and I just LOVED it. I did add some garlic powder to the mayo as well and it was wonderful. SO quick too! I used some nice sourdough bread.... yummm!!

Eastern Rice Salad

Feta Chicken

Yummmmmmyyy!!! I did as others did and added some sun-dried tomatoes, garlic, and spinach. Another thing that I added to the feta was a couple of artichoke hearts.... YUMMMM. Delicious!

Annie's Fruit Salsa and Cinnamon Chips

I made this last night for my birthday supper and just loved it! It was a refreshing appetizer. My sister and brother-in-law seemed to really enjoy it as well. My boyfriend thought it was "too sweet" but he's not big on sweets before dinner and with all that sugar and fruit, it is bound to be sweet. Loved it! Thanks!

Cajun Style Red Bean and Rice Soup

This was SOOOO yummy!! I made it last night and it was DELICIOUS. Changes I made: I used polish kielbasa as andouille sausage is hard to find. I put in the whole package as I wasn't about to leave half a package in the fridge. I left out the bacon as it really doesn't need it and it's too fattening. I left out the ham hock as the store only had them in packs of three and I wouldn't use the others. I'd imagine that they'd give the dish even MORE flavor, though... I added three cans (about 6 cups) of broth as 8 cups seemed like a lot to me and I wanted it to be thicker. I topped it with the rice, sliced green onions, a small dollup of fat free sour cream, and some shredded colby jack cheese. Serve it with cornbread and you have a heartwarming dish on a cold day!
