Quick Pickled Jalapeno Rings

What an awesome recipe! I had a ton of jalapenos in my garden and I didn't know what to do with them. This recipe came up in a Google search. I love the slight sweetness they have - I will never buy store bought pickled jalapenos again... these were wonderful and so easy! Thank you for sharing!

Sesame Pasta Chicken Salad

A wonderful salad for a nice summer evening! I added additional vegetables (chopped tomatoes, diced carrots, etc) and could have easily left out the chicken if I wanted to make this even quicker. Perfect!

Chili Rubbed Pork Tenderloin With Apricot Ginger Glaze

I made this for dinner a few nights ago - it was quite easy and absolutely delicious! Our grill is put away for the winter so I pan fried it to brown the exterior of the pork and baked it for about 20 minutes at 350 F. YUM!

Pork Tenderloin with Dijon Marsala Sauce

This was SO good! I used light cream as it was what I had on hand and wanted to cut down on the fat content. I also wisked in a couple tablespoons of light sour cream for a little extra bite. Definitely worth saving and sharing! Thanks!

Candied Kielbasa

I made this last night for a gathering. I'll admit that the ingredients scared me a little at first (and before baking it tasted quite spicy!) but it mellowed quite nicely when it was cooked. I chose to bake this first for about an hour, stirring every 20 minutes, and then transferred to a Crockpot. I also added in about 1/4 cup of BBQ sauce and a few splashes of Worstershire. The end result was fabulous and SO EASY! Happy to add this to my arsenal of potluck recipes!

Greek Chicken Pasta

YUMMY!!! I thought this was fantastic. I did as other reviewers suggested and dumped in a little of the marinade from the artichoke hearts. Would definitely make this again. Unfortunately I learned my hubby doesn't like artichokes in pasta (GASP!) so it won't be as frequent as I would hope.

Homemade Black Bean Veggie Burgers

YUM! We made these a couple nights ago, taking the advice of a couple reviewers and draining the veggies / beans completely and adding 1 cup of bread crumbs instead. They were delicious! Topped them with guacamole but would next time top with avocado slices. Thanks!!

Eh... I'll have to try this one again. Giving this one 4 stars because its obvious people really like it. It was SO sticky though!!! I had to add a ton more flour so I could even roll it! Great flavor, though... its obvious that gingerbread cookies are an art... leave them in too long and they will get hard, not long enough and they will be too soft.

Classy Chicken

Tropical Salad with Pineapple Vinaigrette

At first, I thought that the vinaigrette was a little strange but once the flavors had some time to meld, we just LOVED it. I left out the bacon to cut back on cholesterol. Deliscious!

Baked Teriyaki Chicken

Chocolate Peanut Butter Cup Cookies

I made these cookies yesterday... at first I thought they were going to have too many fillers - I left out 3 of the peanut butter cups for this reason - but they were AMAZING. Moist and delicious! My boyfriend LOVED them. They are rich but heck, you only need one cookie anyway. ;-)

Cajun Style Red Bean and Rice Soup

This was SOOOO yummy!! I made it last night and it was DELICIOUS. Changes I made: I used polish kielbasa as andouille sausage is hard to find. I put in the whole package as I wasn't about to leave half a package in the fridge. I left out the bacon as it really doesn't need it and it's too fattening. I left out the ham hock as the store only had them in packs of three and I wouldn't use the others. I'd imagine that they'd give the dish even MORE flavor, though... I added three cans (about 6 cups) of broth as 8 cups seemed like a lot to me and I wanted it to be thicker. I topped it with the rice, sliced green onions, a small dollup of fat free sour cream, and some shredded colby jack cheese. Serve it with cornbread and you have a heartwarming dish on a cold day!

Annie's Fruit Salsa and Cinnamon Chips

I made this last night for my birthday supper and just loved it! It was a refreshing appetizer. My sister and brother-in-law seemed to really enjoy it as well. My boyfriend thought it was "too sweet" but he's not big on sweets before dinner and with all that sugar and fruit, it is bound to be sweet. Loved it! Thanks!
