Cranberry Nut Bread II

Made this bread tonight and hopefully there will be some left in the morning with coffee! It is so good and easy to make. Not sure about bad reviews, but a few tips: make sure eggs are at room temperature and that oven is preheated. Also, I didn't use butter, used smart balance instead. Remember, when baking measurements should be exact, don't eyeball it.

Six Can Chicken Tortilla Soup

I really loved this soup,but the only recommendation I have is that you use a roasted chicken you can pick up at the market. I used low sodium chicken stock and didn't need to add salt. The chicken seasons the soul perfectly. So simple and so delicious. Top with a sprinkling of shredded cheese and some avocado chunks and you're good to go.

Scottie's Chicken Tortilla Soup

This is so simple and delicious, but I did use some leftover roasted chicken and low sod chicken stock. You can add some cumin for a little kick, and maybe some cilantro. The market roasted chicken is so flavorful , no need to add salt. Top with some avocado chunks and you're all set.

Sweet Potato Bread I

This is such a yummy bread, but I also cut back on the sugar.I used 1/2 cup white sugar and 1/2 cup brown. Also,instead of vegetable oil, I used 1/4 cup smart balance spread. No nutmeg, used pumpkin pie spice. This is a Nice moist bread, I will definitely be making more this coming holiday season.

Sophie's Zucchini Bread

Great recipe, BUT should have greased pans. Recipe calls to ungreased and I had a problem getting them out. The bread was very tasty,cake like..yum!

Classic and Simple Meat Lasagna

Although this was very good, I think it needed more sauce. I found it to be a little dry, but flavors are great and hubby loved it. Next time I'll add more sauce and add mozzerella in the layers instead of all on top. Also, the cooking time was longer than stated in the recipe.

Brunch Egg Bake

I doubled the recipe but omitted the flour. I'm not really sure why you need it but it came out beautifully. Used frozen bell pper/onion mix and added frozen spinach until cooked and cooled. Just mixed it with eggs and milk and cheese and it was fabulous!!

Pork Chalupas

Absolutely fantastic!! I had a larger roast, and crock pot isn't to big so I just cooked some of the bean chili mix on the stove. This is a wonderful dish and it is so simple to prepare.

Sausage Pasta

I added some chopped zucchini and mushrooms to the onion and garlic, very delish!! After browning sausage I also drained some of the oil. This recipe is very versitile and easy. Lighter fare for your pasta craving.

Baked Corn I

This is outstanding!! I made it this evening for dinner and my husband absolutely loved it. I cut the butter a bit and add diced green chilis, and it was delicious. This will be a regular dish from now on.
