Artichoke Mashed Potatoes

Very yummy. This recipe is really a more healthy alternative to traditional mashed potatoes. I roasted a few cloves of garlic and threw that into the food processor with the artichokes and milk. The recipe as written calls for very little butter, but the artichoke mixture was so creamy I was able to use even LESS and my potatoes were still moist and creamy! Healthy, easy, quick, delicious - everything I need in a recipe!

Zucchini Boats on the Grill

These were delicious! I didn't add any tomatoes since my husband hates them, so to compensate I increased all of the other veggies a little bit. I also left out the bacon so that it was a vegetarian dish. I used red onion and added two cloves of freshly minced garlic. Like other reviewers, I just used breadcrumbs instead of bread. Lastly, I used a little cheddar cheese, but mostly I put in feta, which was very good. I did cook mine on the grill, and used another reviewers suggestion of making open "boats" instead of enclosing the zucchini in the foil. It was not mushy at all this way. I'll definitely make this again! It could easily be baked in the oven, so this is going to become a year round side dish in my family :)

Slow Cooker Beef Stew III

Very good. I'm not much of a meat eater, but my husband is, so I cut the meat down to 1.5lbs and increased the vegetables to compensate. Like a lot of other reviewers, I added fresh garlic and black pepper, used beef stock (low sodium) in place of water, and added some cornstarch in the last 30 minutes of cooking. I cooked it on high for 4 hours and then low for another 6 hours. The veggies were cooked perfectly and my husband said that the beef was juicy and tender. I'd definitely use this recipe again!

Bobbie's Oatmeal Cookies

These were delicious!! Everyone who tried them raved. I used half butter and half butter-flavored shortening to make them softer. Left out the chocolate chips and added extra raisins in place of them. Added about 3/4 teaspooon cinnamon. I will definitely make these again!

Connie's Zucchini "Crab" Cakes

Easy, quick, and very good! Like other reviewers said, make sure to drain your zucchini as best as you can (I just squeezed it in my hands over the sink, worked great). I added a little extra Old Bay and a tiny garlic. Baked instead of fried (350 degrees for about 15mins on each side). I thought these needed a sauce to go on top, so next time I'll make one to go along with them!

Cha Cha's White Chicken Chili

Great recipe, I highly recommend it for those who like spicy food. Boiled chicken and shredded it, used 1.5 cans of chicken broth, and mashed 1 can of beans like other users suggested. Used habanero white cheddar cheese. Very yummy!

Broccoli Cheese Soup

Without question, this is the best homemade soup I have ever made! It's VERY easy and tastes wonderful. I recommend adding a little extra cheese (I usually throw in some cheddar). I also add a dash of extra garlic power. Fresh broccoli has a better taste than frozen (plus, you don't get all of the stems that come in the frozen bags). Thanks for such a great recipe!

Buffalo Chicken Rolls

Very good! Used pepper jack cheese and added some sliced jalapenos- very spicey and yummy. Also, before baking I coated chicken rolls in crushed tortilla chips. This is a new favorite of mine :)

Cajun Crab Soup

Excellent! I wouldn't change a thing. It's easy to make and has a really good flavor. Added a little extra cayenne, because I like my food spicy. I wasn't sure how the corn would taste in the soup, but it was so good. Will definitely be making again!

The Way to a Man's Heart

I cooked this tonight. Local store didn't have halibut, so I used catfish instead. Sauce was excellent, and so was the crabmeat. I felt it would be even better over baked chicken. Needs garlic. Made Cajun Crab Soup, also from allrecipes, to go along with the meal.
