I have made this about 10 times, and everyone loves it. Super easy to make as well. I have a variation below that people seem to like better than the original version.
3 cups shredded chicken (we buy canned chicken from costco, and break it up with a fork to turn it into shredded chicken)
2 8oz packages of light cream cheese (we buy the rectangular boxes of hard cream cheese, rather than the soft fluffy expensive creamcheese )
1 cup Ralph's brand [orange coloroed] hot sauce (buy from a Ralph's supermarket ) cup ranch dressing (we used Ken's brand to make entire recipe gluten-free for our nephew)
1 cup cheddar cheese (we used a bagged Mexican cheese mix, but plain cheddar will work just fine).
Throw all ingredients together in crockpot and heat on low for 3-4 hours (after 2 hours I stirred the stuff to mix up the now warm cream-cheese with everything else).
Serve with tortilla chips or small baguette slices (personally, I liked it better with the baguette slices....but tortilla chips are good to have on hand as a gluten-free option).
