Pumpkin Ginger Cupcakes

Love these!!! Have made them twice, minus the crystallized ginger and they are still delicious. I always forget to sit out the eggs and butter ahead of time. A simple solution is to run the eggs under average temperature water for a bit and microwave the butter for about 30 secs. They are good with or without icing, however, I like to add a cream cheese icing and sprinkle with cinnamon and sugar. It decorates them up a bit for taking places.

Avocado Feta Salsa

Wonderful! It does need 1 more avocado than stated. I serve with pita bread that has been cut into triangles and broiled. That really adds a great element.

Pumpkin Pancakes

They were everything I had hoped for. We served with walnuts that were sauteed in a pan with a bit of butter and brown sugar, which was a great addition. When making the pancakes once you pour the batter onto the skillet spread it out some with the back of a spoon. This helps thin the pancakes and keeps them from being undercooked and mushy in the middle.

Chef John's Buttermilk Biscuits

Perfection. We loved these biscuits. They came out perfectly layered and flakey. I tried the vegetable peeler for the butter, like another reviewer suggested. It worked out great. My only tip is when the butter starts to get slippery coat it with some of the flour mixture to help keep your grip.

Lemon Cake

My family loves this cake. I put it in a 9x13 every time and it is perfect. I also make a strawberry version. Change the cake mix to strawberry and the pudding to strawberry creme and omit the lemon juice for in the icing. A chocolate version with crushed Heath Bar on top is very yummy as well.

Best Spanish Rice

Pleasantly surprised! Was afraid it would be to bland due to the lack of ingredients. However, that was not the case. It had wonderful flavor for such a simple recipe. After browning the rice I threw everything in a rice cooker minus a bit of the liquid and added a pinch of chili powder. In no time we had perfect rice. Unlike many other rices, this one tasted just as good reheated as it did fresh.

Baked Dijon Salmon

Had high hopes for this one due to the reviews. It was good and I will add it to our Salmon rotation for variety. It is worth making and has a good flavor, however, I wasn't wowed like others. I would suggest making more of the bread crumb coating. I only had 2 filets and used all of it. Would have been disapointed in the lack of coating if I had to spread it over 4 filets.

Absolute Mexican Cornbread

What a disapointment after reading all of the great reviews. I'm giving it 2 stars because it was edible, however, did not live up to the reviews by any means. I should have stuck with my old standby which is... Jiffy Cornbread Mix, follow the instructions on the box and then add a handfull of cheddar cheese, a handfull of frozen corn and some diced up green onions. It is quicker, taste better and the leftovers are good. We tried to eat the leftovers from this receipe a few days later and they were unedible.
