Basic Cheesecake
Cheesecake is my favourite dessert, so I have very discerning tastes when it comes to this decadent delight. This is a great basic cheesecake recipe! The cake has a very moist and smooth and texture. The flavour is very rich and creamy. The first time I made this was for Christmas dinner dessert and everyone thought it was a very nice recipe. I did change the crust though; I used a ginger snap crust instead. Crushed gingersnap cookies with butter. I further modified this recipe by making it gluten free, using gluten free flour and gluten free ginger snap cookies, there is really nothing comparable to graham crackers in the gluten free cookie world so I improvised and it was still wonderful! Ginger snaps gave it quite a nice ‘festive’ flavour.

Zucchini Chive Dip
I doubled this recipe and made this dip with ultra low fat cream cheese and added some garlic for a little bit more flavour, I took it to a pool party and everyone thought it was really great! I think it's really important to use frresh chives too. If you're following a Weight Watchers diet plan 5 cups of this dip is only 10 points when using ultra low fat cream cheese!!

Fluff Dip for Fruit
I took this dip to a pool party with fresh cut fruit and it was really enjoyed. I modified this dip slightly and it was still excellent. I used fat free white chocolate instant pudding, ultra low fat cool whip (or Cool Whip Free in the USA), skim milk and one teaspoon of almond extact instead of amaretto. Everyone thought it was GREAT. I will make it again in smaller portins to snack on at home or as a dessert. I may not add the amaretto next time, it adds a little something but it was quite good without it too!
