Cream Cheese Kolacky

Very tender & delicious. I made them into balls & then thumbprinted them instead of rolling them out & only got 12 (large-ish) cookies. If I had made mine smaller, I could maybe get 24 but they would be tiny. I also used powered sugar to roll them in instead of flour.

Hogs and Kisses

Addictingly good! I actually snapped the bacon into bite-size pieces before throwing them into the bowl of melted chocolate. If the chocolate is too thick, add a splash of milk. I also baked my bacon over a rack placed over a foil lined baking sheet until really crispy. I put them onto a paper towel to soak up the rest of the grease & waited for them to cool before throwing them into the bowl of melted chocolate.

Pumpkin Cake III

Very good cake. The only change I made was that I used 2 teaspoons of pumpkin pie spice instead of cinnamon. Everything else I kept the same & it turned out great. Used Cream Cheese Frosting II (by JJ) from this site. This cake was VERY moist & flavorful

Toads in the Hole I

Very good & SO EASY! Very versatile depending on what kind of sausage you have on hand. I used maple, apple chicken sausage. I did make some minor changes. I put the pan (small round metal pan) with some fat rendered from the sausage in the oven to get hot, then I put in the sausages topped with the batter.

No-Sugar-Added Blueberry and Banana Wheat Muffins

LOVE THESE. They definitely made 12 largish muffins that needed a bit more time in the oven, but they were really delicious. I added a shot of vanilla & some grated carrot but I think even without those add-ons it would have been great. They're not really sweet but very tasty topped with butter. My diabetic grandmother is going to love these:)

Buttermilk Oatmeal Muffins

Very moist & tasty. Very good recipe to work of off. I reduced the sugar to 1/4 or 1/3 & omitted the oil altogether. I also added some vanilla, shredded apple & carrot, cinnamon & ginger, also some ground flax seeds & replaced some of the white flour with wheat. Very good!

Special Buttercream Frosting

It tastes VERY good but it doesn't hold its shape too well unless just out of the refrigerator. It does say that it's ideal for "frosting & borders" which it's great for so I gave it 5 stars + it's delicious. I agree with the others that you can sub. some of the shortening with butter (unsalted) and if you don't have cream you can sub. whole milk or half & half. It does taste pretty awesome, so if you're using it for a simple cake (or like we did, on a cookie "cake") it'll work perfectly & be yummy. It is definitely not a good "glue" nor stable enough for more intricate designs & detail.

Green Tomato Cake

Super moist & delicious! Some people guessed that I had put apple in it too (it does resemble an apple cake) but I didn't. I followed the recipe to the letter & was not disappointed. Next time I might put a little less sugar.

Basic Cream Cheese Frosting

5++ stars (even before my addition)- I added a TBL of pumpkin puree that added a hint of flavor & pretty color which turned out great since I used this for the Pumpkin Cake III recipe on this site.

Fresh Apple Cake II

This was wonderful! Very delicious, everybody loved it. I did think it was too sweet so maybe next time I'll cut down the sugar. I omitted the nuts and added a sprinkle of ground ginger, otherwise I followed as written. Very good.

Spinach and Rice (Spanakorizo)

I added scallions & used frozen spinach. Very tasty dish! This is a staple in our household, not just a side dish. Sprinkle it with some great high quality feta to finish. As another reviewer mentioned, the cooking method could have been better & made this 5 stars. Saute' your rice with the onions & then add the tomato sauce, hot broth/water, spinach & other ingredients. Remember to rinse your dry rice to get rid of some of that extra starch too.

Tofu Parmigiana

This was wonderful! Really loved it! Doesn't taste overly like tofu, it was really filling & felt like a heavy Italian meal. Paired with pasta, was delicious! Changes I made: I used the flour + egg + breadcrumb breading method instead of just breadcrumbs & didn't put the tofu in water as per the recipe. Also baked the tofu for 10 min. on each side in 350 degree oven instead of frying to make it healthier.

It was pretty good, very heavy - fairly good beer batter. I used shredded carrot instead of cabbage & used flour tortillas. I would make this again with the changes I made.

Pear Pie III

Very very good pie! I did change the butter/sugar amount because a whole cup of sugar would have been much too sweet. I only put in 1/3 cup sugar & 1/3 cup butter. I also sliced the pears & added blueberries & some cinnamon. Then I sprinkled the top of the pie with some sugar before baking. It was so good! You can really taste the fruit & the custard is really light and delicious. I will definitely be making this again and again! I'm sure you can add a number of fresh fruits to make it different each time. Very good with those minor changes
