Corned Beef and Cabbage II

This is a fabulous recipe. I had no idea what I was doing and I don't usually care for corned beef. The butter and parsley at the end is a MUST for buttery tasting veggies and fresh color. I only cooked the cabbage for 5 minutes and the veggies for 15 (tender crisp). I substituted Beef Broth for water(recommended by another reader), used coarse sea salt, added 4 whole cloves for a nice added flavor, and red potatoes and baby carrots (on hand). My brisket was almost 6 pounds and this recipe still worked great. I had to take the meat out to cook the veggies, but that was perfect for the 'rest period' for the meat. Also, I had no seasoning packet for the brisket (home raised beef) and it made no difference. It was better without it!

Salmon Marinade

This recipe was really easy, and it sounded good, but the Worchestershire was far too overwhelming for fish, plus it made the salmon dark so it was hard to see the cooking progress as well. I don't think I'll use this again.

Hot Bacon Asparagus Salad

This sounded great, but I was less than impressed. You have to be ready to eat it the minute it is done because it doesn't hold up. Needless to say that if you don't eat it all right then it's wasted because it doesn't keep, and having leftovers are the best part. I ended up throwing a lot of food out.

Chicken Enchiladas II

I was more than a little disappointed after reading the reviews. In all fairness, I omitted the green chiles, but this wasn't like enchiladas to me at all. I could use more flavor and less richness (sour cream). It wasn't bad, just a let down to those of us expecting something more flavorful.

Black Bean and Corn Salad II

This is my new favorite salad! I made it for Mother's Day and it was a huge hit. I don't like cilantro so I omitted it, and the avacadoes in the store weren't any good, so I omitted those. I used 3/4 tsp. salt per other reviews, and it could use the whole 1 tsp. The salad was even better the next day, which wouldn't be the case if it had avacado in it. We imagined eating it with a hearty corn chip as a salsa, or topping over green salad, but it was great just spooned out of the bowl too! It was so easy, and so flavorful as well as nutritious.

Best Bread Machine Bread

this bread is very easy to make, and it turns out with a great crust. It isn't a very dense bread and is rather bland by itself. It toasts great, and is quite good when toasted with garlic spread on it for dinner.

Steak Tips with Mushroom Sauce

This was an experience. If I were to make this again I would choose a better cut of meat. The portabella mushrooms were great, but the sauce was a little odd. I didn't know to add the flour slowly, so maybe the sauce didn't turn out quite right. I would've thought it would be slightly more fluid. It tasted pretty good when it all went together, but I probably won't make it again without modifications to the sauce.

Easy Salmon

It was quick and easy, but we weren't very impressed. I think it was the flavor of the seasoning packet. We just prefer to BBQ fish. But if I cook it in the oven, a little salt, pepper, lemon and butter goes a long way.

Slow Cooker Taco Soup

Wow! I don't think it gets any easier than this. What a great soup to throw together. I cooked it on low for 6 hours, then on high for 1 more and it was perfect. I served it with cornbread and it went over wonderfully. I didn't make any changes, and none were needed.

Chocolate Icing

Busy Day Chicken Rice Casserole

I tried this recipe last night and we loved it. This is definitely a keeper. The only difference was that I used fresh mushrooms instead of canned. It cooked about 1 hour and 20 minutes. The dry soup mix over the top adds a lot to the flavor of the chicken! I really liked throwing it together in minutes and leaving the kitchen. Thank you!

Chewy Peanut Butter Brownies

I tried this recipe last night and we love it! It is a great brownie, better than a fudge one in my opinion, but is nearly perfect with a little chocolate icing. I only had an 8x8 pan, so it was a little thicker, and took a few minutes longer to cook, but definitely a new family favorite!

German Potato Salad

This potato salad has a great flavor. I added two extra strips of bacon and it was really good. I should have chopped the potatoes smaller so they would be more coated with the sauce though. And they are better when they're reheated.

Cajun Seafood Pasta

I made this recipe last night for the first time. I'm glad I read the reviews first, because even cutting the pepper amounts in half it was still very hot. What a fabulous dish! I also used just shrimp, and substituted dried herbs because I had them (basil, thyme, parsley)- using less (1 tbsp fresh = 1 tsp dried) I don't think it could get any better, but next time I'll try it with shrimp and scallops, and mushrooms. This is something I will cook again and again.
