Quinoa Black Bean Burgers

These are out of this world! I used a garlic and olive oil flavored Quinoa and followed the rest of the recipe to a T. I have also made these with Cous Cous and pecans when I didn't have any Quinoa. Still fabulous!

Spinach Quiche

WOW! This is outstanding! I couldn't find the flavored feta, so I just used plain. It still had TONS of flavor! Cut the milk to 3/4. I only used about 2TBL spoons of butter and sautéed fresh spinach (chopped and squeezed to get excess water out)then added fresh mushrooms,garlic and onion. I baked mine for 40 minutes total and it came out perfect. This is a keeper and will make it again and again!

Chicken Breasts Stuffed with Perfection

This was very good! The BF loved it! (so did my guests) Only thing I did different was used Panko Italian seasoned crumbs with the parm cheese for the topping. I also lightly pounded the chicken and butterflied it and stuffed it that way. Cooked it at 350 degrees for approx. 40-45 minutes.

Fettuccine Alfredo IV

I have made this twice now, and both times cut the butter in half down to one stick. Came out fabulous! I also substituted the heavy cream for light cream the 1st time, and 1/2 & 1/2 the 2nd time and was equally yummy both times!

No-Bake White Chocolate Cheesecake

Followed the directions to a T and this was so quick and easy to make and came out FABULOS!!My boyfriend isn't a huge cream cheese fan, but even he couldn't stop eating this!! We both LOVED it. Will be making this again and again!

Aussie Chicken

Followed the recipe almost to a T, except I used dion mustard, onion powder instead of flakes, and omitted the corn syrup. It still made a lot of sauce, so I served the leftover chicken over pasta with the sauce. Was even better the next day!

Chicken Cordon Bleu Lasagna

Got RAVE reviews with this!! My guests left with the recipe and my boyfriend was still raving about it the next day!Just made a few changes. Used Panko Italian flavored break crumbs for the top. And when I cooked the chicken, I seasoned it with garlic powder, salt and pepper. I did add a little more cheese because I love cheese. Cant wait to make this again!

Thanksgiving Meatloaf

WOW!!! Its like turkey and stuffing all rolled into one! I followed the recipe almost to a T. Only things a did a bit different was I used Panko bread crumbs and parm cheese (all I had on hand). Will definitely make it again! I used 99% lean turkey meat and it was still moist.

Fettuccine with Sweet Pepper-Cayenne Sauce

I cant believe how delicious this turned out! Took advice of other reviewers and cut cayenne pepper to 1/2 tsp, broth to 1/2 cup, and added sour cream and cheese after I took the peppers and broth off the heat. I used Penne pasta because thats what I had and used one red, one orange and one yellow pepper. YUMMY!!

Fish Tacos

I cheated and used quality fish sticks, but the sauce was AMAZING! I could have eaten myself sick on these! I made them up with slices of fresh avacado, shredded cabbage and fresh chopped tomatoes. A KEEPER!!

Broccoli and Tortellini Salad

AWESOME!! Tweeked it a bit. Used 2 cups of the dry tortellini and I left out the sunflower seeds. Per the other reviews I blanched the broccoli. I used 3/4 cup mayo, 1/3 cup sugar and 3 teaspoons cider vinegar. A definite keeper and will be making it again for Memorial Day weekend!!

Teriyaki Chicken Cordon Bleu

THIS IS OUTSTANDING! I marinated the chicken for about 6 hours and it was SO flavorful. I substituted swiss cheese for the string because thats what I had in the fridge. We made country gravey to put over it as well. Cant wait to make it again!

Balsamic Roasted Pork Loin

I made this for my boyfriend and he said it was resturant quality! He couldnt stop raving about it! I made it exactly like the recipe is written and marinated it overnight. I also made the drippings into gravy. Cant wait to make it again!
