Spider Cupcakes

Loved these! Very simple to make. They do take some time so be prepared. I put the icing on first and then followed another comment and stuck the string twizzlers inside the cupcake (I used an ice pick to create the hole) so that they would stick. Then added the eyes and fangs. I topped with chocolate sprinkles to add the "hair" look. Everyone thought they were great!!!

Salsa Chicken

really enjoyed this recipe! The only thing I changed was I cut up the chicken to 4 oz serving sizes and used a 1/2 packet of the taco seasoning. I threw the seasoning and chicken in a bag so that it would coat the chicken without getting fingers dirty. Added salsa and threw in the oven for 20-25 min. Served with some yellow rice. Will def make again.. and it's so easy!

Sweet Mustard Chicken Bake

Love this recipe.. make it about every other week. Very simple.. I don't modify much but since I am watching my diet these days I do the following: Cut down the butter... Maybe 1/4 cup AT MAX. I use the same amount of mustard and honey (1/4 cup as well). I use 3 chkn breasts, cut up in strips, and throw everything in a baking dish. I use a smaller baking dish so that the chicken is almost covered by the sauce.. that way it cooks in the juice/sauce vs the "basting frequently"... and viola!

Chicken Balsamico

Pretty good. The chicken took longer than what was listed but wasn't an issue. Used plum tomatoes (vs the description by Campbells' day sun-dried). I think the kalamata olives provide a strong flavor so make sure you like before you add. I did get the reduced fat Cream of Chicken but will try to use that next time since to lower the fat amount. Makes ALOT of sauce - not sure if you can freeze so be prepared to either toss or have extra for a few days. Will make it again!!
