Banana Banana Bread

Great recipe. I added just a bit of vanilla and 1/4 cup of chopped walnuts. For a sweet crunchy top, I mixed 1/4 cup of chopped walnuts with 2 tablespoons of brown sugar and sprinkled on top. This was fabulous!

Avocado Salad

I didn't have any green pepper or cilantro on hand, so I punted. I decided to have this as my main meal for lunch. I added some small shrimp and sprinkled feta cheese on top ... YUMMY! Thanks for the recipe

Chocolate Mayonnaise Cake II

My family has handed down this recipe but with a few differences. We use 2 tspn of baking soda, no paking powder. And instead of the 1 cup of water, we use 1 cup of cooled brewed coffee. It adds a slight mocha flavor. Yum.

Tomato, Cucumber and Red Onion Salad with Mint

I always get compliments when serving this salad. I too cut done on the mint so it's not so overwhelming. I've even sprinkled crushed peanuts on top right before serving.

Fried Rice I

This is very close to the "local" style fried rice I use to get in Hawaii. To get it closer to that version, try adding either some spam, or portugese sausage, or both. And just a bit of oyster sauce. Ono!

Cashew Crusted Chicken

I was so excited to make this but when I opened my pantry all I had were macadamia nuts and an Asian Plum Sauce. But it turned out great - the chicken was very moist! Now I'm going to get creative and try with other sauces and nuts.
