Unbelievable Chicken

Excellent marinade!! Since I only made 4 chicken breasts, I cut back on a few of the ingredients. I used 2 cloves of garlic instead of 3...1/4 c. brown sugar instead of 1/2....2 tablespoons coarse mustard instead of 3. I marinated the chicken for 5 hours and it was fabulous. Hubby had seconds and said that this was our "chicken marinade" from now on... thanks Ruthie for a great recipe I will use over and over!!

Slow Cooker Stuffing

Loved this stuffing....I did increase the spices to our liking....and loved the mushrooms in this. The key to this recipe is to keep stirring and "fluffing" this stuffing every hour or so. Ours was perfect, not gummy or solid like other reviewers had said. I also added the chicken broth as needed, so it was not over mushy. Perfect and stayed nice and hot and loved the whole crockpot aspect. Will most def. make again! Delicious!

A Simply Perfect Roast Turkey

Mostly Veggie Pizza Stoup

5+ from me and the family. We LOVED this soup. I have made another pizza soup from this site and it was good....this was better! I used 1 lb. of extra lean ground chicken instead of the turkey. I also added some chopped turkey pepperoni. Nice and healthy and hearty. I made some ditalini pasta on the side and scooped a little of the cooked pasta into the bowl and ladled the hot soup on top. Topped with a little percorino romano cheese. Delicious! I was kinda thrown off by the brown sugar and ground ginger ingredients...but followed this recipe to the "t" and was so glad I did....It just works! Thank you Tat2 for a great dinner that I did not feel so guilty or bloated after eating.! ps. I also prepared this soup the night before and put in in the crockpot and put that in the fridge till the next morning.....before I left work, put the crock in, turned it on low and done. :)

Barbecue Pork On Buns

Used a can of root beer instead. Delicious and moist. I drain most of the juices after cooking and then shred the meat and add the bbq sauce. Served on toasted whole wheat sandwich thins with cole slaw and bean salad. Family loves this, thanks!

Buttery Corn Bread

New Orleans Corn Bisque with Smoked Sausage

Really good. My hubby really liked this one....I used 4 c. of fat free/low sodium broth and then added 1 1/2 c. of fat free 1/2 and 1/2 instead of using all milk. I also used turkey kielbasa and added some of Emeril's Essence to jazz it up. Thanks!

Mixture for Meatballs, Meatloaf or Burgers

Good and moist. I did soak my bread in skim milk instead of water. Made 16 nice meatballs. Nice flavor with a little sweetness from the ketchup. Family enjoyed. Thanks!

Slow Cooker Mashed Potatoes

Probably the best mashed potatoes I have ever made! Used low fat cream cheese and sour cream. Used 2 cloves of minced garlic and a 5lb. bag of russets. I did spray my crockpot lightly with cooking spray. These potatoes were creamy, flavorful and so delicious. They stayed nice and hot in the crockpot on low. They were perfect. Thanks!

Simple Roasted Chickpea Snack

Loved these!! Cispy and yummy....turning and shaking the pan while cooking is important...I also took a tip from my girl Tat2whttrsh and made sure that the drained and rinsed chick peas are totally DRY before coating them in the oil/spice mixture. Will definately make again. Thanks!

Cheeseburger Meatloaf

Family approved...5 stars...easy and they loved the cheesey filling. I also made a glaze of ketchup, worsteshire sauce, brown sugar and a little dry mustard to top half of the meatloaf since hubby likes the sweet ketchup-y glaze. Served with broccoli and Darn Good Mashed Taters! from this site. Thanks!

Fantastic Black Bean Chili

Loved this one too! I did use a lb. of extra lean ground chicken since thats what I had on hand. Reduced to 2 cans of black beans drained and rinsed. Also added a 28 oz can of crushed tomatoes and a 14 oz. can of fire roasted diced tomatoes. Also added some cumin and more chili powder. Very good and tasty. Served with multi-grain tortilla chips for scooping. Thanks!

Sweet Corn Cake

Amazing!!! Made this and the whole 8x8 pan was gone! My hubby ate most of it and loved it. I was skeptical because this didnt seem to be a lot of batter (which was very thick and kinda chunky). And this was my first time using masa harina which I found in Walmart. So prefectly sweet and tender. Reminded me of the corn cake that we get at a local Mexican restaurant that is scooped out with an ice cream scoop. Just delicious, I did use frozen white corn. Other than that...followed recipe exactely....Do Not skimp on the water bath....I really believe that the texture of this recipe is because of that. Worth every calorie! Love it...served along side of Ropa Vieja in a Slow Cooker in this site. Thanks!

Excellent! My 12 years old inhaled this one on soft flour tortillas with a lil cheese and low fat sour cream. Did not change a thing...I did use a boneless chuck roast. I loved how the peppers and onion cooked down with the tomato paste. Very flavorful and delicious. Served with Sweet Corn Cake from this site. Thanks!

Bean Soup

So very good....made this in the crockpot with a leftover ham bone and a bag of navy beans that had soaked overnight. So warm and filling...as this cooks, the beans thicken the soup and slightly break down. Hearty and perfect on a cold day. And very easy to make. Thanks!

Bountiful Garden Zucchini Enchiladas

Excellent and so different. Added a lilttle more chili powder and some cumin to the veggies. I also used 3 nice sized zuchinni diced. I loved the cheese sauce. Made 8 beautiful enchiladas and served with Mexican rice, low fat sour cream and some salsa. Thank you for a great recipe!

Philly Cheese Steak Pizza

Ok...this was amazing with some changes. First I used pre-made pizza shells froma local bakery. Spread some peppercorn ranch dressing on the shell, topped with the roast beef, sauteed green peppers and red onion (I also added the beef bouillon to the veggies while they cooked), and topped with provolone cheese instead of mozzarella. Amazing!!! Cheese steak heaven. Different and delicious. Thanks!

Baked Acorn Squash

Shredded Brussels Sprouts

A little time consuming...but worth it. I used white sweet onion in stead of green and totally omitted the pine nuts since the jar I had seemed to have gone rancid. Hubby is s huge brussel sprout fan and really liked this dish. Made the day before and had no problems re-heating and eating on Turkey Day. Thanks for a yummy brussel recipe!
