Chicken Enchiladas II

Reviewed: Mar. 19, 2002
Yummy!!! Easy to make and delicious!! I followed the recipe exactly and it came out perfect. I used already cooked purchased chicken instead of cooking my own...time saver. Will make again and again...husband loved it....might add jalepeno peppers next time for a little extra heat....otherwise, a sure keeper!!

Loved these!! Very tasty....a little tricky to make but worth it. My company inhaled them. I think i will omit the butter on top..they were a little greasy while cooking....all in all....a great appetizer!! Thanks!!

Bruschetta al Pomodoro

Reviewed: Mar. 20, 2002
Fabulous!! Because there is a lot of chopping...(and I double the recipe)..i make the topping a day ahead. The flavors really combine together. I also added a splash of balsamic vinegar and added a little fine chopped red onion. I don't put them back under the broiler to heat, serve it cold. My family and company raves about this recipe!!

Angel Chicken Pasta

Reviewed: Jul. 3, 2002
This recipe tasted like I went out for dinner....the sauce is excellent...I added more wine and sauted mushrooms.....family loved this....I used thin spaghetti the first night and we had the leftovers over white rice. I also cut my chicken into strips and sauted in olive oil and garlic. I add the cooked chicken and mushrooms to the sauce and poured that over the spaghetti...I like it better this way....this is a complete meal with a salad....great recipe!!

Black Bean and Corn Salad II

Reviewed: Jul. 28, 2002
This is the best cold bean salad recipe ever!! I made it this weekend for a birthday party and got rave reviews. Everyone wanted the recipe. I used frozen white corn instead of yellow. I agree with other reviewers of this recipe....the cilantro is key....dont omit....the flavors are incredible. There was enough dressing, so it wasn't dry at all...and it was a very "fresh" tasting salad. Will make over and over....perfect bbq side dish!

BLT Dip

Reviewed: Aug. 2, 2002
This recipe was ok....very easy to make....but way too much bacon. I think I will try it again with 1/2 lb. bacon and maybe some chopped green onion for a little zing.

Grilled Potatoes and Onion

Reviewed: Aug. 12, 2002
Very tasty....except I agree with some of the other reviewers....the potatoes stuck to the foil. Even after I tossed the potatoes and onions with olive oil first and added some butter to them, they still stuck. My suggestion is to make sure they are well coated with oil and to keep flipping the packet. I will try again next time...they are very good, taste like diner homefries.

Award Winning Soft Chocolate Chip Cookies

Reviewed: Sep. 8, 2002
YUMMY!! These cookies are great....I halved the recipe and used 1 stick of butter and 1/2 stick of butter flavored crisco. I added mini semi-sweet choco. chips and they turned out perfect. I still got 4 1/2 doz. out of the halved recipe! Family loves these...a sure keeper.

Unbelievable Chicken

Reviewed: Sep. 11, 2002
Excellent marinade!! Since I only made 4 chicken breasts, I cut back on a few of the ingredients. I used 2 cloves of garlic instead of 3...1/4 c. brown sugar instead of 1/2....2 tablespoons coarse mustard instead of 3. I marinated the chicken for 5 hours and it was fabulous. Hubby had seconds and said that this was our "chicken marinade" from now on... thanks Ruthie for a great recipe I will use over and over!!

Baked Pork Chops I

Reviewed: Sep. 16, 2002
Excellent!! Loved this recipe. I used 4 boneless center cut pork chops....followed directions exactly and this meal turned out great. Hubby loved this....chops were tender and juicy...I didnt have white wine, so I used white zifendale and sauce was very tasty. I also browned the chops and baked covered for 25 minutes and then added the sauce....and baked covered for another 25 and they were perfect. I cut down on the cooking time because I used less chops and they were not that thick. Next time I will add sauted mushrooms to the sauce....will make again soon!!

Baked Tilapia

Reviewed: Sep. 27, 2002
Loved this recipe. The fish cooked to perfection...I think I would omit cranking up the broiler next time...I dont think you needed that extra few minutes to brown the butter on top. The flavor was great...easy to make. I think I would also use some of my own homemade sauce next time instead of the paste...but the peppers and onions were very tasty with the sauce and fish...I've never had fish like this before. Will make again!

Brown Sugar Meatloaf

Reviewed: Sep. 28, 2002
Yummy!! Best meatloaf I ever made. I did use onion soup mix instead of the chopped onion and only 1/4 c. milk, thought the mixture was moist enough and didnt want it to be too mushy. I also took the advise of other reviewers and used only 1/4 c. of the brown sugar and a few splashes of worcestshire with the ketchup and spread this on top of the meatloaf. Very tasty....thanks for a fabulous recipe, Starbuck!!
