Mama Corleone's Sausage and Peppers

Excellent....family loved this! I used extra lean chicken sausage that I removed out of the casing, cooked and crumbled with garlic, the onions and peppers and seasonings in the olive oil. Used ziti and mixed all together....topped with pecorino romano and some red hot pepper flakes on mine....there were no left overs....delicious!

Easy Lemon-Blueberry Jam

I am reviewing this as I made it and gave to my sister...I have not tried it yet myself. So I will post my review when I try it....but the 5 star is what my sister gives it. She told me that this jam is "store quality"! Absolutely loved it! And that I should sell it??!! She is my biggest food critic. I made a few mini changes. One is to crush 2c of the blueberries in the food processor. The second was to use 1 1/2 c of splenda and fat free/sugar free lemon jell-o as per another reviewer. Well this was right up my sister's alley considering she watches her sugar intake and I only used 1 box of jell-o which is only a 0.30 not the 3oz that is suggested in the recipe. She also said the texture was perfect and it jelled nicely. I did process this in a hot water bath after filling and sealing my jars. I only got 3 half pint jars from this recipe.....thanks!

Cinnamon Baked S'Mores

Delicious! Loved changing this classic up with the cinnamon graham. Did not wrap in foil and bake though....made these s'mores the old fashioned way. Thanks!

Back-Burner Ratatouille

Pretty good....but I felt it was a little bit bitter....great way to use fresh garden veggies...and thats what I did...was gifted eggplants, zucchini, yellow squash and peppers.....thanks!

Baked Chicken Nuggets

Pretty good....family ate it up....used Italian whole wheat crumbs and sprayed my chicken with an olive oil spray rather than dipping in the melted butter. Tasty non the less....bet would be better with butter...but was trying to save some fat and calories. Also used a grated pecorino romano cheese...thanks!

Low Carb Zucchini Pancakes

3 out of 4 of us enjoyed these....I used regular onion instead of green and ran the onion and garlic through the food processor with the zucchini....loved the low carb aspect....but I found them kinda hard to stay together while cooking and flipping....I did add a few tablespoons of corn meal to "tighten" them up a bit....thanks!

Yummy Grilled Asparagus

Really tasty grilled asparagus!!! Family loved it, especially my almost 6 yr old who kept going back for more! I used Kraft Tuscan House Italian dressing and marinated my spears for a few hours. Just delicious! Thanks Celeste!!!

Maria's Rice

Delicious and so easy.....used about 1/2c more rice and upped the beef broth....also used low sodium broth. Added a pack of sliced fresh mushrooms and reduced butter to 1/4c. Very yummy ...my company enjoyed!

Pretty good....my youngest said it tasted like pumpkin pie...lol.....hubby enjoyed, I did leave out the cloves. I did add some vanilla to the egg mixture. Thanks!

Garbage Fried Potatoes

Really really good.....how can u go wrong with these home fries....I used fresh mushrooms instead of canned and red onion as well as the red and green peppers. Also used olive oil. Thanks for a yummy side!

Lots O'Veggies Sausage Spaghetti Sauce

Loved it....used all lean Italian chicken sausage out of the casing and crumbled....sauteed that with all of the veggies and then transfered all of that in to my slow cooker with all other ingredients to cook slowly all day. Great and chunky on whole grain pasta! Thanks!

S'more Brownies

Yummy....but a 4 because made this in an 8x8 and it took so long to cook and even though I added the S'mores topping close to the cooking end....the topping (especially the marshmallows) was still a little too dark for me....and kinda hard to cut once they cooled because of the marshmallow....not the recipes fault, tasty non the less...next time I will make in a 9x13 as stated in the recipe.... thanks!

Toasted Breadcrumbs

So easy and fresh! Used whole wheat bread and a lone whole wheat english muffin that was just about ready to be thrown out. Toasted and dried up nice in the oven....think it was a lil longer than 1/2 hr....but no worries. I pulsed the toasted breads in the food processor. Addded a lil sea salt, pepper, and dried parsley and used these crumbs to dredge and coat my eggplant slices. Great breadcrumb coating. Thanks!

Jen's Fresh and Spicy Salsa

Im giving this a 4 cause hubby and kids though it was too spicy and I loved it and only used 1 jalapeno!!! I also used red onion instead of the green. I thought this was great and loved the texture due to using the food processor. It really reminded me of restaurant quality salsa. Very fresh and tasty. Fresh cilantro is a must. Thanks for a yummy and quick salsa.

Sophie's Zucchini Bread

Apparently the best zucchini bread I have ever made according to my parents....since I gifted both loaves....I never got to try it....I made one mini change and that was to use 1c brown sugar and 1c white sugar....other than that, it smelled wonderful and cooked up beautifully. Thanks!

Sopapilla Cheesecake Pie

Just ridiculous! So very good. I did use reduced fat crescent rolls and reduced fat cream cheese....you cant even tell.....Loved the topping with the cinnamon sugar. This recipe is so easy, smells wonderful while cooking and is very tasty. Thanks!
