Chef John's Mushroom Gravy

I wish I could give this a 5 cause I really liked it and it was so easy to make....my only thing was...it lacked some flavor. I liked the addition of the thyme, salt and pepper....but it needed more. I used 3 c of beef broth and actually increased the flour by 1tblspn. Perfect thickness and very smooth...just lacked something. I think like another reviewerr pointed out it was lacking pan drippings from a roast which we all know is loaded with flavor. A great start recipe though....and served over Chef John's Perfect Mashed Pototoes. Thanks!

Chef John's Perfect Mashed Potatoes

Very good! And yes, I did watch the video on making mashed potatoes....and I did actually learn something new and that was to let the excess water steam off the potatoes after drained and before mashing....I have never done that before. All in all, a good mashed potato and we gravey for the top with our meatloaf. Thanks!

Classic Meatloaf

We loved this one but made one change and that was to use 3 lbs of extra lean chicken instead of the chuck....I know...its a big change...BUT it was excellent and cut way down on fat and calories. I kept all the other ingredients the same and even used the glaze on half of the meatloaf since the kiddos dont care for it. Great flavors here with all of the veggies and actually nice and moist again due to all of the veggies. Will make again!

Lemon-Parsley Green Beans

These beans were excellent....and fresh beans is a must. Loved the flavors of the garlic and lemon zest.....I had to use dried parsley since I had no fresh on hand. Great side for our meatloaf last night. Thanks!

Mexican Shepherd's Pie

Really enjoyed this one. I had leftover taco seasoned ground beef in the freezer that I used. I added a can of Rotel tomatoes with chilies, can of corn, a can of drained and rinsed black beans, and also some shredded zucchini just to add extra veg factor. I used a 4 cheese Mexi cheese blend and omitted the olives for the kiddos. This was a very good all in one meal. Thanks!

Italian Spinach Sausage Pie

Really good....used hot and sweet Italian sausage that was grilled, leftover, and sliced, also used low fat part skim ricotta cheese, pecorino romano, and provolone cheeses. I did not use a crust! I made this frittata style in a deep dish pie plate and upped the eggs to 8. Thanks!

Scott Ure's Clams And Garlic

Used 150 little neck clams! A stick of butter, good white wine, and I used McCormick's California Style Garlic Powder that had parsley in it....also added a lil chili powder. Added 2 lbs of shrimp and some andouille sausage. Put everything in a big disposable tin pan covered with foil and let steam on the grill until the shrimp were done and clam opened....delicious! Used the broth in the bottom of the pan for dipping crusty bread. Just amazing!

Creamy Rice Pudding

This was a fail for me as well.....2 in one day....lol.....I am so sure this was all my fault and not the recipe....I went out and made sure I found a medium grain rice....I used fat free half and half...(think that was my problem!!!!)....was wayyyyy too thick after refrigeration!!!! Not even scoopable ....a solid mass...waste of ingredients and major time......I just can not for the life of me make proper rice pudding.....will buy Cozy Shack next time....sorry.....I tried.....

5 because I have had this before when my sister made it and it was amazing.....but a true 3 from me because this was a true epic fail for me....not sure why.....I was so disappointed ....it stuck to the pan....was extremely dry and crumbly....nothing like I had remembered. BUT.....this recipe when made well is totally amazing, moist, cinnamon-y, sour creamy...delicious. I still can not figure out what I did wrong....but I assure you I will try again....

Easy Chocolate Chip Pound Cake

Delicious and very moist! I omitted the sugar completely.....saw no reason what so ever to add extra sugar to a box mix. Used a sugar free/fat free chocolate pudding mix, low fat sour cream, 1c water and 1/3 canola oil, and kept it at 4 eggs. Made in a bundt pan and everyone really complimented on this easy dessert. Thanks!

Macaroni and Cheese V

Pretty good.....a standard way to make mac and cheese with a classic roux into a cheese sauce. I quadrupled the recipe to bring to a bbq yesterday....seemed to be a hit....used extra sharp cheddar. Thanks!

Chicken Parmesan Casserole

My family loved this one. A little time consuming but delicious non the less. I skipped the flouring of the chicken and went straight to the egg and bread crumbs. I used a whole wheat bread crumb that I made from scratch. I did not deep fry them, I pan fried the chicken pieces and drained excess oil on paper towels. I also used a homemade chunky marinara sauce that was full of veggies (onions, peppers, carrots, mushrooms) instead of jarred sauce. I used low fat part skim mozzarella cheese and some slice provolone for the top. A very yummy and filling meal.

Smokin' Jack BBQ Sauce

10 stars from me....this was an amazing sauce! Super simple to put together and so very tasty. Beautiful consistency and flavor was to die for. We used this on shredded bbq beef sandwiches and also topped with Cindy's Coleslaw from this site. I cut the recipe down to 10 servings and used Gentlemens Jack instead since that was all I had on hand. Planning on making this again soon! Thanks!

Tennessee Rubdown

Cut this recipe in half and omitted the white pepper since I had none. I used this on a 3-4lb beef rump roast that I let marinate overnight in the fridge in this rub. Yesterday morning I put it in the crockpot for 8-9 hours on low and then shredded for sandwiches. I used Smokin' Jack's BBQ Sauce from this site to top these amazing sandwiches. Excellent!!!

Roasted Cajun Potatoes

I used yukon golds instead of reds and used Emeril's cajun spice blend instead of the individual spices. Cooked 375 for a little over an hour tossing every so often so they got nice and crispy. Family loved!

Cindy's Coleslaw

Used low fat mayo and used 2 packets of Truvia non sugar sweetner instead of straight sugar. Made in the morning and let sit in the fridge for the day and served with shredded BBQ beedf sandwiches. Delicious!
