Maple Pecan Granola

Cheesy Vegetable Chowder

My girls loved this. I did not use canned peas, but I added some frozen broccoli instead. I also used skim milk and 2% velveeta and shredded sharp cheddar cheeses. They loved it with grilled cheese. Thanks!

Big James' Pork Rub

Excellent! Loved this rub. I used on pork that I marinated in this rub and put in the crock pot. After 8-10 hours, shredded the meat and added our fave BBQ sauce. Excellent BBQ pork! Family loved...thanks!

Creamy German Coleslaw

I used a pre-packaged cole slaw blend and low fat mayo and Stevia non-sugar sweetner instead of sugar. I also added some fine diced red onion. My family loved this with their pulled pork sandwiches. Thanks!

Best Ever Banana Bread

Savory Beef Stir-Fry

Family like this....used a very lean and thin cut of steak called chip steak (normally used for cheese steaks) and 2 bags of frozen stir-fry veggies. I did omit the water chestnuts as my family doesnt care for them. Easy and tasty. I also added some sesame oil to the stir-fry cooking process for more flavor. Thanks

Quick Bean and Turkey Italian Meatballs

I loved these and so did my family. I used extra lean ground chicken instead of turkey. And to my surprise I did have a can of butter beans which I have never used before in my life. I decided to "pulse" the beans through my food processor instead of mashing with a spoon because I did not want big pieces of bean skin in the meatballs. I also threw in 3 cloves of fresh garlic into the processor as well. I used a whole wheat Italian style bread crumb, added some dried parsley and some grated pecorino romano cheese for a more authentic Italian meatball taste. I baked these instead of fried and used my small cookie scoop to form the meatballs. These were so tasty and we just dipped them in some homemade marinara and ate them as is. Will def make again and its a great way to eat a leaner meatball and have that extra fiber added w/o the kids noticing. Thanks!

Sausage Soup

Very nice. I used 2 (14 oz) cans of diced tomatoes. One was a fire roasted tomato and the other a diced tomato with fennel. I also added some extra fennel seed and dries thyme leaves to the soup for more flavor. I did not add the pasta at all. This was hearty enough without the pasta and I was trying to keep this low carb. Very tasty with some pecorino romano cheese on top. Thanks!

Roasted Cauliflower with Red Chile, Cilantro & Lime | REMCooks

Excellent! Healthy and very tasty. I made quinoa and added some black beans and some extra lime juice. I served some of the cooked roasted cauliflower on top and what a delicious dinner. I loved the taste of the heat from the chilies, the lime and the fresh cilantro!

My family loved these. I used a on orange pepper instead of green and added the water 1/2c at a time until it simmered and absorbed. Nice rich flavors, sauce was very good. Served on whole wheat buns. Thanks!

Roasted Green Beans

I used maybe a pound of fresh green beans just to try this recipe and I LOVED them! I have been roasting a lot of veggies lately and have never thought about the green bean.....mine looked exactely like the photo, a little crispy but tender on the inside. They were very flavorful with very few ingredients. I did use sea salt instead of kosher. Will make again. Thanks!

Slow-Cooker Posole

Easy and really pretty good....I used black beans since I had no hominy on hand....will definately use hominy next time. I also added some cumin, garlic powder, sea salt and pepper for a more flavorful roast. Thanks!

Vegetarian Kale Soup

Really good and very healthy....I only used one potato because I didnt want all the starch and carbs.....I also used a quart jar of homemade diced tomatoes that were made on the spicy side with a jalapeno that someone had made me from their garden. Thanks!

Megan's Meatloaf

Very good! I used whole wheat bread crumbs instead of the crushed crackers and homemade tomato sauce instead of the paste. I also used green pepper in place of the celery and put my veggies through a food processor first for a very fine mince. Very flavorful meatloaf. Thanks!

Roasted Broccoli

I used many different veggies here....asparagus, big cherry tomatoes, mushrooms, cauliflower,.....omitted the chili powder and sprinkled the montreal steak seasoning to taste. Delicious! Tossed these roasted veggies with cooked quinoa for a light and healthy dinner. Thanks!

Cheesy Sausage Pasta

My kids love this....I used lean turkey sausage out of the casing, fat free half and half instead of cream and I reduced the grated cheese to about 1/2c. I used pecorino romano instead of parm. Thanks!

Philly Cheesesteak Sandwich with Garlic Mayo

Probably one the best cheesesteaks ever!!! Used red and green peppers, provolone cheese and good rolls which we crisped up under the broiler. We used a paper thin cut of beef that was called chip steak (cut specifically for steak sandwiches) that we were gifted from friends. This was an amazing sandwich and the garlic mayo really threw it over the top. Delicious and will most definately make again. Thanks!

Make-Ahead Sour Cream Coffee Cake

Very nice ...except I made and baked right away. It was delicious and moist. I used a 10' round spring form and had no problems with rising or releasing from the pan. Next time I will sprinkle some of the topping in the middle of the cake as well. Thanks!
