Marinated Chicken Bruschetta

I'm sorry to say that I did not use Wishbone dressing!!!! I used Good Seasons and used balsamic vinegar and olive oil. I marinated my chicken in this for most of the day and then grilled. For the bruschetta, I used very red plum tomatoes that were seeded and fine diced, a huge clove of fresh garlic pressed, fine diced red onion, some sea salt and frsh pepper, fresh basil, and then I added some more of the Good Seasons balsamic Italian dressing. Delicious combo on the grilled chicken! Everyone loved it. Thanks!

Italian BBQ Pork Chops

Delicious.....marinated 4 nice thick chops for 24 hours then grilled. They were tender and juicy. I loved the crust that the brown sugar and ketchup gave the chop while grilling and the balsamic was subtle and not as strong as I thought it would be but a welcomed change in this marinade. My family loved this dinner tonight, served with grilled asparagus. Thanks!

Fiesta Stuffed Turkey Burgers

Yummy...used all green onion instead of the 2 different onions, I also used extra lean ground chicken instead of turkey and also added some panko crumbs. Fresh cilantro is a must and is so refreshing I think. Topped with pickeled jalapeno slices. Grilled indoors and ate bunless. Very flavorful and healthy. Thanks!

Chicken Marsala Florentine

Probably one of the best dishes I have made in awhile! My family inhaled this chicken. I did sautee a large bag of spinach in olive oil and garlic first off and set aside. I also omitted the butter completely and used a little more olive oil instead. I had no problem with a nice thick sauce that was incredible. I cooked the chicken until lightly browned on both side (but not cooked through) and placed them in a baking dish, topped with the garlic spinach, and topped that with the marsala mushroom and sundried tomato sauce. Covered with foil and placed in a low oven of about 300 degrees for 30-40 minutes. This chicken just was so tender and juicy and Im telling you amazing with flavor. No leftovers at all. Will make again very soon....thanks!

Asparagus Frittata

Excellent! Used 8 whole eggs, some fat free half and half and used diced red onion. I also used a 4-cheese blend of shredded cheese in this along with pecorino romano. I use left over roasted asparagus instead of boiling asparagus. Added a little garlic powder and dried basil as well as a little sea salt and pepper. Ate this as a lite dinner and kids ate the rest of breakfast this morning on whole wheat toast.

Vegetable Cheesy Soup

My kids really liked this soup. I added frozen peas and carrots, frozen mixed colored peppers,and fresh zucchini in addiotion to the celery, onion, and creamed corn. I used about 4c of chicken broth and used fat free half and half instead of milk. I also omnitted the butter and made a slurry of cornstarch and water to thicken the soup. Will add more cheese next time as per my oldest's request. Thanks!

Sausage Minestrone

Excellent! I used an Italian 4-cheese chicken sausage and used spinach as my green. I did cook my pasta seperate and added only for those who wanted pasta in their soup. I had mine with some croutons on top and hot red pepper flakes. I served this for a luncheon I had for some friends and my kids and hubby ate the rest for dinner. The whole pot gone in one day. Very flavorful , easy and defiantely freezable. I made this last Sunday, froze it and re-heated for Wednesday. Thanks Christine M. for a yummy soup!

Whole Grain Healthy Banana Bread

Really good and healthy.....I used flax seed instead of meal and decreased it a little less than 1/2c. Kept everything else the same, my sister really loved this one. I also used the whole egg white, thought it would be kind of difficult to measure 2tsp of it. Great healthy way to use up bananas! Thanks!

Crazy Good BBQ & Grill Marinade

I thought this was great on London Broil! I scaled the recipe back by half and used brown sugar instead of white and olive oil instead of canola. Very tasty...thanks Celeste!

Grilled Honey-Lemon Chicken

I thought this was a very good chicken marinade although the honey is not prominant at all, the lemon really shines through in this one. I did use olive oil and cut the salt way back, other than that, love the fresh lemon zest and fresh garlic. Thanks!

Best of Both Worlds Roast Chicken

Beautiful to look at and delicious to eat. Moist, juicy and very flavorful. I used half butter and half olive oil for the herb mixture to coat the chicken. Other than that, no changes. Loved the garlic flavor on the meat from the garlic being under the skin. Seriously a delicious dinner that my family loved!

Onion Soup Mix

I used no sodium boullion packets instead of the cubes. Made onion dip with low fat sour cream. Very nice....made the day before serving so the onions had a chance to re-hydrate. Thanks!

Spicy Kielbasa Dip

Different, rich, and delicious! I used turkey kielbasa, low fat mayo and low fat cream cheese. I used pickled jalapeno rings chopped instead of a fresh jalapeno. It could have actually been a bit spicier for me personally. I also added a sprinkle of salt and pepper and used a 4 cheese pizza blend since I could not find the 6 cheese blend. Our company loved it served with pita and tortilla chips. No leftovers! Thanks!

Chef John's Macaroni and Cheese

Loved it! Made about 1 1/2lbs of elbows and doubled the cheese sauce. I added about 1/2 tsp of dry mustard to the cheese sauce as well. I used skim milk and had no problem with a nice thick creamy sauce. Loved the panko crumbs....nice and crunchy. Thanks!

Delectable Marinated Chicken

Excellent! I used reduced sodium worcestshire, teriyaki and soy sauces and added NO additional salt. I used garlic powder instead of garlic salt also. I used olive oil instead of canola and honey instead molasses. I marinated chicken breast for 24 hours and then grilled...full of flavor! Thanks!

White Bean, Turkey, and Sausage Chili

Loved it....I used hot Italian chicken sausage out of the casing and crumbled and I also used extra lean ground chicken instead of the turkey cutlets. I use low sodium fat free chicken broth andded some chopped red peppers and a zucchini diced for more veggies. Very nice served with low fat sour cream and shredded cheddar with tortilla chips for dipping...thanks!

Spinach Chicken Parmesan

Excellent....my family loved it....and I even used very thin pork scallopine instead of the chicken since it was what I had on hand. I used roasted red peppers and omitted the butter and used a bit of olive oil to sautee the spinach and added some garlic as well. I did top everything with some shredded mozzarella. Thanks!
