Veronica's Hot Spinach, Artichoke and Chile Dip

Excellent! Everyone loved this dip....I used lower fat options in the cream cheese and mayo and it made no difference. I also used a pecorino romano cheese instead of parm and used a homemade pickeled jalalpeno. So very good and really not too spicy although you can def tasted the chilies in this. Great twist. Thanks!

Spinach and Mushroom Quesadillas

This is my new favorite quesadilla!!! Delicious! I used a whole bag of fresh baby spinach that I sauteed with the garlic and sliced baby bella mushrooms in olive oil, not butter. I also used a whole wheat tortilla and a Mexi-cheese blend. I topped mine with homemade pickeled jalapenos, salsa and some reduced fat sour cream. So good! Cant wait to make again!

Chicken Parmigiana

Always a huge hit. I made 8 cutlets, also seasoned the egg mixture with salt, pepper, dried parsely and garlic powder. I use an Italian seasoned crumb mixture as well and used my own home made spaghetti sauce instead of jarred sauce. Served with linguine on th side. My family loved this!~

Roasted Parmesan Asparagus

So delicious! Did NOT steam the asparagus....just roasted it. Squeezed the fresh lemon over the asparagus after it was roasted and that gave an awesome fresh flavor. My family inhaled this veggie last night and I ws glad I mande 2 bunches because it was gone. Skip the steaming and go right to roasting....you wont regret it. Thanks!

Nana's Beef Stroganoff

Delish! And yes, I made this in the crockpot.....used some marsala wine since I had no white wine, and at the end of slow cooking for about 9-10 hours, added 4 oz. of low fat cream cheese and 1c of low fat sour cream, thick, creamy and delicious! Served over buttered egg noodles, family loved...thanks!

White Bean and Artichoke Salad

Really enjoyed this one! Used small white beans, red pepper, marinated artichoke hearts (which really are so much more flavorful), also used some of the marinade for the dressing. I did use dried herbs since I had no fresh parsely, and I omitted the mint which I thought wouldn't go with these flavors. Just used a drizzle of olive oil instead of 1/3c and drizzled the red wine vinegar as well. That mixed with some of the artichoke marinade...delicious!

Blackened Chicken

Very good!!! I marinated my chicken breast in this rub overnight and then grilled on my Cuisinart indoor grill. Delicious flavor. Served over salad. Family loved it!

Egg Salad I

My hubby loved this egg salad. This was a good way to use up those Easter eggs my kiddos have dyed. I did use a spicy brown mustard instead of dijon since I had none left and decreased to about 1 tblspn. A nice creamy salad with a lot of flavor from the mustard, dill and red onion. Thanks!

Grilled Balsamic and Soy Marinated Flank Steak

Delicious! I used green onion in this marinade. Very nice flavors here. I marinated a London Broil instead of flank and grilled. Everyone loved it!

Hasty Chocolate Pudding

I had no cornstarch and used flour instead. I searched and found that for every tablespoon of cornstarch was 3 tablespoons of flour. So I went with that.....this pudding was way too thick, maybe the info I got on the starch to flour ratio was off???? Kids said flavor was good, just way to thick to eat. Will try again since it is a very easy recipe and next time I will have cornstarch on hand. Thanks!

Healthier Banana Crumb Muffins

Sweet Cole Slaw

Excellent! Used all low fat options in the mayo and sour cream. I also did not have white balsamic so I used my regular balsamic vinegar. I also used 3 small (coffee packets) of Stevia non sugar sweetner instead of the white sugar. Sure the balsamic tinted this slaw an odd color....lol....but it was delicious!I also love the addition of the orange juice. Next time I will add some orange zest as well to bring out that orange flavor. I also added some green onions to this and used a store bought slaw mix. Excellent with shredded BBQ pork! Thanks!

BBQ Spice Rub

Marinated a pork roast rubbed in this overnight wrapped in plastic wrap. Cooked on low for about 10 hours in my crockpot. Shredded and added our fave BBQ sauce a(Sweet Baby Rays)and served with slaw. Delicious!~

Zesty Marinated Asparagus

I used Good Seasonings dressing and made by balsamic dressing (which i like because I can control the oil). I used way less then 1 1/2c though. Loved the fresh lemon zest and I also felt that the balsamic reduced as the asparagus roasted. Simple and delicious!

Marinated Chicken Bruschetta

I'm sorry to say that I did not use Wishbone dressing!!!! I used Good Seasons and used balsamic vinegar and olive oil. I marinated my chicken in this for most of the day and then grilled. For the bruschetta, I used very red plum tomatoes that were seeded and fine diced, a huge clove of fresh garlic pressed, fine diced red onion, some sea salt and frsh pepper, fresh basil, and then I added some more of the Good Seasons balsamic Italian dressing. Delicious combo on the grilled chicken! Everyone loved it. Thanks!

Italian BBQ Pork Chops

Delicious.....marinated 4 nice thick chops for 24 hours then grilled. They were tender and juicy. I loved the crust that the brown sugar and ketchup gave the chop while grilling and the balsamic was subtle and not as strong as I thought it would be but a welcomed change in this marinade. My family loved this dinner tonight, served with grilled asparagus. Thanks!

Fiesta Stuffed Turkey Burgers

Yummy...used all green onion instead of the 2 different onions, I also used extra lean ground chicken instead of turkey and also added some panko crumbs. Fresh cilantro is a must and is so refreshing I think. Topped with pickeled jalapeno slices. Grilled indoors and ate bunless. Very flavorful and healthy. Thanks!

Chicken Marsala Florentine

Probably one of the best dishes I have made in awhile! My family inhaled this chicken. I did sautee a large bag of spinach in olive oil and garlic first off and set aside. I also omitted the butter completely and used a little more olive oil instead. I had no problem with a nice thick sauce that was incredible. I cooked the chicken until lightly browned on both side (but not cooked through) and placed them in a baking dish, topped with the garlic spinach, and topped that with the marsala mushroom and sundried tomato sauce. Covered with foil and placed in a low oven of about 300 degrees for 30-40 minutes. This chicken just was so tender and juicy and Im telling you amazing with flavor. No leftovers at all. Will make again very soon....thanks!

Asparagus Frittata

Excellent! Used 8 whole eggs, some fat free half and half and used diced red onion. I also used a 4-cheese blend of shredded cheese in this along with pecorino romano. I use left over roasted asparagus instead of boiling asparagus. Added a little garlic powder and dried basil as well as a little sea salt and pepper. Ate this as a lite dinner and kids ate the rest of breakfast this morning on whole wheat toast.

Vegetable Cheesy Soup

My kids really liked this soup. I added frozen peas and carrots, frozen mixed colored peppers,and fresh zucchini in addiotion to the celery, onion, and creamed corn. I used about 4c of chicken broth and used fat free half and half instead of milk. I also omnitted the butter and made a slurry of cornstarch and water to thicken the soup. Will add more cheese next time as per my oldest's request. Thanks!
