Apricot Sausage Kabobs

Yummy! Different but definately a hit at our Mother's Day bbq. I used turkey kielbasa, baby bella mushrooms, red and green peppers and vidalia onion chunks on the skewers. I also used the 3/4c of apricot preserves, but decreased the dijon to a 1/4c. Lovely glaze and very tasty. Easy and quick kabob with great flavor. I did omit the actual dried apricots due to other reviews of them burning, so I decided to amp up the veg factor instead. These were even good leftover. Thanks!

Rosemary Ranch Chicken Kabobs

Fantastic!!! I used 1/4c olive oil and kept all other ingredients the same. Loved the smell of this creamy marinade. I also used a light ranch dressing (Hidden Valley). Used about 7 chicken breasts that I cut into chunks and marinated overnight. I think the fresh rosemary is key....smell was amazing and chicken moist off the grill. Thanks!

Old Settlers' Baked Beans

Amazing....had no groud beef so I used a full pound of bacon instead cooked with vidalia onion. (Nothing better then the smell of bacon and onions cooking together!)....Used 3 cans of pork and beans and 1 can of drained rinsed dark red kidney beans. Omitted the regular sugar as I saw no need for it....but kept the brown sugar and all other spices and condiments the same. Fantastic beans! Rich and very flavorful. Got rave reviews on Mother's Day....thanks!

Amish Macaroni Salad

Excellent....everyone really liked this salad. Made a few changes...used a full pound of elbow macaroni, 4 hard cooked eggs, vidalia onion light Miracle Whip, spicy brown musatrd and only 2 Tblspns of the sugar. And of course the rest of the ingredients. Made the day before serving. Just delicious and plenty sweet with just a fraction of the sugar called for. Hubby LOVED it....thanks and will be making again!

Bean and Kale Ragu

I loved this one! I used vidalia onion of choice, used already pre-cut/washed kale.....upped the cumin to about 2 teaspoons cause I love it....also added some chili powder...used dried oregano and basil since I had none fresh....and of course added some major hot red pepper chili flakes....good and healthy. Thanks!

Savory Garlic Marinated Steaks

Loved this!!! Used only 1/4c of the balsamic, increased the worcestershire to a tablespoon and upped the liquid smoke to a full teaspoon. Marinated a london broil for 48 hours....grilled and just delicious! I brought the left over marinade to a boil for a few minutes and served that as a nice extra sauce on the side. Thanks!

Spicy Rapid Roast Chicken

Delicious and moist. I doubled the spices and olive oil...I also used a 7lb roaster chicken. Since we are not "skin" eaters....I rubbed some of the spices under the breast skin and it was amazing. Flavorful meat! Saved and carcass in the freezer for stock and soup! Thanks!

Shrimp and Asparagus

Had to make this healthier...but non the less tasty. I omitted the butter completely. Grilled my asparagus and mushrooms. Marinated my shrimp in a lil olive oil, the crushed garlic, sea salt and pepper. Sauteed that with a half sliced red onion and added the grilled veggies and pecorino romano cheese. Served as is w/o pasta. Very good and light. Thanks!

Grilled Brown Sugar Pork Chops

Yummy grilled chops...marinated overnight and used olive oil instead of veg oil and decreased the brown sugar to 1/4c. Tender and juicy. Family enjoyed. Thanks!

30-Minute Minestrone

Delicious...added white canelli and dark red kidney beans. Also used napa cabbage, extra garlic, fat free low sodium chicken broth, a larrge can of crush tomotoes, and used a whole grain sea shell pasta that I cooked on the side and added the after cooked. I did make some chicken meatballs as well and added them so that this was a complete meal. Everyone enjoyed. Thanks!

Crunchy and Delicious Granola

Not as crunchy as I hoped. I did use no salt raw sunflower and pumpkin seeds. I also upped the flax seeds and the wheat germ to 1/4 each. Upped the cinnamon to almost a tablespoon, kinda chewy finsih....and kinda bland due to lack of salt and no sweetness...next time I would add some brown sugar and maybe 2 tblspns of olive oil. Good potential and very healthy. Tasty in my yogurt today...just not the best recipe I have tried....but thanks!

Baked Kale Chips

Delicious! Just took these out of the oven and had a hard time resisting them. So good and healthy. I used a no fat/no calorie olive oil spray, seasoned salt....just a sprinkling and some pepper. I also was able to find a triple washed kale already cut into small pieces. Thanks!

Hash Brown Casserole II

Really yummy and decadent. Used red onion and 1/2 green pepper diced fine, cream of mushroom soup reduced fat sour cream and used crushed whole wheat Ritz crackers instead of the corn flakes. Will definately make again. Thanks!

Thai Shrimp and Cabbage

Amazing and so, so simple! Fresh, clean and cant wait to make again. I used the cole slaw mix for convience, red onion sliced thin, no water, fresh cilantro which really is key and the hot pepper flakes are right up my alley. I loved this dinner last night....who needs rice? Not me...this is tasty, easy, and perfect as is. Thanks!....ps....also forgot to mention that I did add a few splashes of sesame oil at the end! Really has great flavor!
