Nana's Southern Coleslaw

So good....my kiddos loved it....used a pre-shredded slaw mix for ease....also used fine diced red onion (which my eldest noticed and loved), low fat mayo, omitted the milk, used low fat buttermilk and used 3 packets of Truvia sugar substitute instead of the sugar and it was way sweet enough. Also used fresh lemon juice which I think it way better than any bottled, salt and fresh cracked pepper. Made this in the morning and served tonight....NO LEFTOVERS!!!! Family inhaled. Thanks!

Nanna's Banana Bread

Really good! My kiddos loved it....I subbed all of the oil with applesauce and I used 4 bananas that were frozen and thawed. Instead of the nuts, I added 1/2c mini chocolate chips. Delicious, I tasted it and a great way to use up some buttermilk which was low fat by the way. Thanks!

Grilled Vegetable Salad

I loved this! I do agree with the first reviewer that grilled veggies are a stand out on their own....but I disagree in a 2 star rating....I thought this was really very good. I used leftover Simple Grilled Vegetables from this site...asparagus. zucchini, yellow squash, tomatoes, and mushrooms. This dish was perfect for leftovers. I roughly chopped the veggies and then made the quick dressing and tossed and chilled until dinner. I did decrease the dressing to 1 tblspn of olive oil, 2 tblspns red wine vinegar, 1 tablspn of dijon, the garlic, salt and cracked pepper. Great flavors and I would definately make again. Thanks!

Szichuan Tofu and Red Bellpepper

Excellent! I to use sriracha sauce in place of the chile garlic sauce...and upped it to 1 tblspn. I used white vinegar instead of rice vinegar since I had none. I also added some fresh broccoli florets, sliced vidalia onion and some green onions to this to bulk it up a bit more. I loved it! It was just as good for lunch today. And to spice it up even more today...I added more sriracha sauce and some hot pepper flakes today. Love the hot and spicy. Thanks for a yummy tofu meal!

Chef John's Homemade Chicken Stock

Easy and the smell was amazing as it cooked! I used a full chicken carcass that I froze to be used for stock. The carcass was from Spicy Rapid Roast Chicken from this site. I also added some fresh cracked pepper. After simmering all day and like I said the smell was intoxicating....it lended a very flavorful rich stock that was deep with color. I tasted it and it was delicious. It is now in the freezer for future use. Thanks!

Bromley Coleslaw

Delicious! I realized as I was making the sauce for this slaw that there was no vinegar or acid and was tempted to add some....but did not as I was curious to try as is....it didnt need it! This was an amazing slaw that was creamy and slightly sweet and kept people coming back for more. I used a lil over a cup of low fat mayo, reduced the honey to 1/4c and decreased the celery seed way down to maybe a lil over 1/2tblspn. I also really like the addition of the green onions in this slaw. Made this the day before serving and served with Amazing Simple Pulled Pork Sandwiches by IRISHGINA74....and fantastic combo. Thanks!

Amazingly Simple Pulled Pork Sandwiches

We loved this! I used 4 lbs of a boneless pork roast with just a little fat on it. I also used a diet cola and I did use fresh cracked pepper on the meat. I did decrease the cider vinegar way down to just 1/2c. The house smelled wonderful all day while this cooked. Before shredding, I did reserve the juices in the crock pot and added some back as I mixed in the BBQ sauce. Sweet Baby Rays Hickory and Brown Sugar sauce is what I used. SBR is out favorite brand of BBQ sauce, so it was perfect. Meat was tender as can be and so very flavorful I served this on whole wheat rolls and mini slider potato rolls for the kids. Brought this to a tailgate yesterday and just reheated for several hours in the crock pot and it was perfect. Also topped with a lil more BBQ sauce and I made Bromley Coleslaw from this site to go with it. Excellent and thanks Gina for a keeper recipe!

Tasty Barbecued Asparagus

Yummy! We loved asparagus and grilled is my favorite way, so we make it weekely in our house. Loved the flavors here. Decreased the sesame oil to 1 tblspn and the soy (which I used low sodium) to 4 tblspns. Also added some cracked pepper. Delicious!

Simple Grilled Vegetables

Simple is right....this is the way I always love to do my veggies in the warmer months. Last night I grilled red peppers, yellow squash, zucchini, mushrooms and tomatoes. Good quality olive oil, sea salt and fresh cracked pepper. Delicious! And I love to make enough for leftovers to make veggie sandwiches or to chop up and throw in a frittata. The ideas are endless for the leftovers. Delicious and thanks!

Cilantro Chicken Burgers with Avocado

Good burgers. A tad dry and I made adjustments to some of the ingredients. I used 1lb of extra lean ground chicken, decreased the garlic powder to a lil over a tspn, used 1/2 lime juice, and some grinds of fresh cracked pepper, I also added some chopped green onion. Tasty and flavorful, but not the best chicken burger here...and I have basically tried them all since I m such a fan of chicken burgers. Thanks!

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Made two adjustments and that was I only had four squares of Baker's semi-sweet left, so I just used that instead of the 6 squares suggested and I used crunchy peanut butter instead of creamy. Excellent cookie. Made one inch cookie dough scoops and flattened slightly. They had a great shape, not all flat some like cookies. Family enjoyed this "all in one" cookie. Thanks!

Spanish Style White Bean and Sausage Soup

Used hot Italian turkey sausage out of the casing, and also used fat free/low sodium chicken broth. Added a diced zucchini as well...great way to use up 1/2 bag of chopped and washed kale that I had to use. Also added some dried basil and oregano. Thanks!

Veggie Stir-Fry

Needed a bit more flavor for me since I was the only one eating this....more heat...used red onion as my onion of choice and all of the rest of the veggies listed....just ok for me...not great....ate this carb free and totally omitted the rice....may make again with a few changes. Thanks!

Garlic Chicken Stir Fry

Good.....2 out of 3 enjoyed it and took leftovers for lunch....used reduced sodium soy sauce and used olive oil and some sesame oil instead of the peanut oil. Also used Truvia non sugar sweetner instead of the sugar (about 2 packets) Quick and easy.

Easy Marinated Artichokes

I am basing this review at the moment on how easy these are to make and on how gorgeous my 2 jars came out....I cant rate taste at the moment as I gave these out as Mother's Day gifts. I used 4 cans of quartered artichokes, 1 1/2 lemons, 4 tblspns of olive oil, salt and pepper, 2 tspns of Italian seasonig and 4 cloves of crushed garlic. They looked so good in the jar, just like the ones in the store. I will update my review as soon as I get the "taste" feedback I need. Thanks for a great recipe. *5/18/12- got my first "taste" review back from my mom who raved about these artichokes. She tried them last night and said they were perfectly seasoned and tangy. At this point the artichokes have been sitting and marinating for a lil over 2 weeks. I think as they sit the will increase in flavor.*

My-Hop Pancakes

I so wanted my family to love these, and unfortunately, I used a new griddle on my stove that apparently I had a hard time with the heat. The pancakes looked beautiful but were under cooked in the middle. Sooooo....for the ones that were cooked they liked the flavor, but for the rest, a gooey mess. I will try again since this is a great way to use up extra buttermilk and the batter looked and smelled amazing. So I will go in the middle on my rating because of my error. Thanks for the recipe!

Cranberry Pistachio Biscotti

Loved the fact that this recipe used olive oil! Made no changes in this amazing recipe...they cook up beautifully and I find after the first bake, let cool completely and then I use a serated knife to slice the cookies before the second bake to crisp them up. My family loved them. I did also add about 1/2 c of white chocolate chips as well...otherwise, a perfect biscotti recipe.

Simple Orange Glaze

Delicious....an easy and very fresh way to dress up a cake. I used this on Buttermilk Pound Cake II from this site...the orange was a nice citrus compliment to the lemon flavor of the cake. Thanks for the recipe!

Buttermilk Pound Cake II

Nice pound cake, nice and dense. Awesome flavor of the lemon. I made no changes to this cake except to use low fat buttermilk. It was great served with Simple Orange Glaze from this site drizzled on top. Thanks!
