Spicy Chipotle Turkey Burgers

Delicious! Used more than one chipotle chile, dried cilantro cause thats what I had on hand, and red diced onion as my onion of choice. Really flavorful! Topped with reduced fat cheddar and sliced avacado. Really yummy burger. And really not too spicy....but had a nice smokey flavor. Thanks!

Disappearing Marshmallow Brownies

Delicious!!! Followed exactely. Made 2 pans of this is 2 days...one for a party and the other for friends. Loved how the marshmallows melt BUT still leave the appearance that they are still there right under the crack-ly top. Really good!

Slow-Cooked White Chili

Really good and easy...but I made a few changes. I used 4lbs of boneless skinless breasts cut into bite sized pieces. I did not cook before adding to crock....I added it raw with everything else. I also only used 2 cans of small white beans....thought 5 cans of beans to 2 lbs of chicken seemed off. So I upped the chicken and reduced the amount of beans and this ratio of 4 lbs of chicken to 2 cans of beans seemed better. I used frozen corn, 1/2 a bag. Added a chopped vidalia onion instead of dried minced, added a yellow squash diced to add more veg factor to the dish and also added a can of rotel. Served with white cheddar cheese and sour cream. Very easy and yummy crockpot recipe. Thanks!

Mimi's Zucchini Pie

Really good....I shredded the zucchini, yellow squash and onion in my food processor and also added the grated cheese to the entire mix instead of just on top. I also added some fresh cracked pepper and a lil sea salt. Tasty!

Nacho Cheese Sauce

Pretty darned good! I have never made a nacho sauce before....its always come out of a jar. This was so easy and we used it on Restaurant Style Chicken Nachos from this site. I used skim milk and had no problems ....nice thick and cheesey. Nice! Thanks!

Restaurant Style Chicken Nachos

Family loved this tonight. I used extra lean ground chicken instead of shredded chicken breast. I seasoned the ground chicken with Homemade Taco Seasoning Mix from this site and also used Nacho Cheese Sauce from this site to top the nachos. I used some tortilla chips and some leftover doritoes...this was very easy, tasty and we also added a lil low fat sour cream as well. Thanks!

Homemade Taco Seasoning Mix

Great taco seasoning....and yes....I do love that I can control the salt. I used regular chili powder and omitted the cayenne and pepper flakes so my kiddos would eat it. Used this mix in a pound of extra lean ground chicken to top nachos. I only ended up using 1/2c of water as well. Delicious and thanks!

Amazing bars....I made a few changes such as adding a full tsp of cinnamon, omitting the applesauce and subbing with 1/4 natural crunchy peanut butter, adding 1/4 wheat germ, reducing the oil to 1 tblspn, adding chopped pistachios instead of walnuts and just using dried cranberries instead of the mixed fruit. I loved that this recipe incorportated the oats, ww flour and the Grape-Nuts cereal....which I had! A very tasty and healthy power bar!! Thanks!

Italian Zucchini Boats

Loved these boats....so easy. I did not cook the zucchini boats in salted water....I baked them at 375 while I prepared the stuffing. I also cooked my stuffing....the zucchini pulp, garlic, onion, I added a diced red pepper, and baby bella mshrooms and some fresh basil. I cooked these veggies down a bit first then added the crumbs, cheese, and eggs. Stuffed the boats and added a sprinkle more of crumbs and pecorino romano cheese on top. These are delcious and you can really add what you like to it....maybe next time some crumbled cooked sausage. Thanks!

Mama Palomba's Spaghetti Sauce

Super yummy...I used a full pound of extra lean hot Italian chicken sausage out of the casing, cooked and crumbled, omitted the ground beef since I had none. Used four cans of crushed tomatoes with basil, added a diced red pepper and baby bella mushrooms which I cooked along with the onion and sausage. I added everything to the crockpot and it was a wonderful easy and very flavorful, chunky sauce. Served over whole wheat spaghetti and served with a salad. Family enjoyed, thanks!

Herbed Citrus Chicken

Loved this marinade!!! I marinated a turkey "london broil" for most of the day and then grilled. I then brought the rest of the marinade to a boil for a few minutes and used as a dipping sauce. I used the juice from a whole lemon and a whole lime, used fresh minced garlic instead of the powder, kept the seasoning salt measurement the same and doubled the rest of the herbs and also added some fresh cracked pepper.....really nice citrus-y flavors. Thanks!

Summer Doritto Salad

Delicious!!!!! Doubled this salad....and glad I did...cause hubby ate 2 big bowls of it!!!! I used 2 lbs. of extra lean chicken instead of the beef....(Gina knew this before I did it....lol).....I also added a can of drained and rinsed dark red kidney beans, and a can of drained black olives, diced red onion and a romaine salad blend in a bag (2 of them). I did add the dorittos and reduced fat Catalina dressing at serving. Really very yummy and hearty. Loved this salad.....a very nice change. Thanks Gina!!!!

Aloha Chicken Burgers

Really yummy. I marinated my chicken in reduced sodium teriyaki marinade and the soy (low sodium as well), I also added 3 chopped green onions to this and marinated all day. I did not use butter on the rolls and I grilled my pineapple slices as well. Hubby and I went bun-less for carb reasons while the kiddos enjoyed theirs on a roll. Very tasty and easy with a side salad. Thanks!

Grilled Vegetables with Balsamic Vinegar

Delicious! I used red peppers, vialia and red onions, asparagus and baby bella mushrooms as my veggies of choice. I marinated all day in the fridge in a gallon size zip lock bag. Great tasting veggies!

These are the best....I use mini chocolate chips and I love the anise seed! I crush mine in a retired coffee grinder that I use for spices. Wonderful flavors and nice and crunchy cookie.....After the first bake I like to slice mine with a serrated knife to prevent breaking the cookies. I also use a silicon mat on my cookie sheet for non-stick loaves. Thanks! Great "Dunk-able" cookie!!!

Sausage and Sauerkraut

Absolutely loved this!!! Made the day before my party and kept warm in a sterno. I used 4 lbs of kraut, did add the caraway which really adds major flavor. I used a tart granny smith apple, a full pound of bacon, and more than 3 lbs of turkey kielbasa . Very nice dish to serve a crowd and great for pot lucks. Delicious!

Nonie's Best BBQ

Everyone really like this. I only used brown sugar and used 1/2c of it since I double the recipe. Used a spicy brown mustard and also added 1 tsp of liquid smoke which I think made this more BBQ-y in flavor. Really nice for our party and kept warm nicely in a sterno. Thanks!
