Southwestern Turkey Casserole

Reviewed: May 3, 2002
This was a tasty casserole but the tortillas didn't soften up all the way. It was perfect as leftovers. I would probably cut down on the amount of tortilla and bake it a little longer. Maybe even assemble it early and have it in the fridge ready to go.

Turkey Shepherd's Pie

Reviewed: May 3, 2002
Too much potato vs. meat. I add Worcestershire sauce to the meat mix and shredded cheese melted over the potato. It was very tasty and great for a raining day.

Pan-Fried Asparagus

Reviewed: May 3, 2002
My husband and I just loved this recipe. The kids on the other hand were less than enthusiastic. I will probably steam the asparagus a little before frying it as it took forever to soften up the stalks. Yummy

Army SOS Creamed Ground Beef

Reviewed: May 3, 2002
This was a tasty and quick meal that we plan on adding to the rotation. Not fancy or for guests, but great for those nights when you don't feel like doing too much. Green beans and applesauce rounded out our meal.

Feta Cheese Turkey Burgers

Reviewed: Apr. 13, 2002
I have reviewed this recipe before but everytime I make them my family can't rave enough. I tried frying them and they were just ok but off the BBQ they are superb. We don't eat regular hamburgers anymore unless we go out to eat. My toddleer and picky 4 yr old both love them.

Baked Dijon Salmon

Reviewed: Apr. 11, 2002
This is the best salmon recipe that I have ever tried. It was fast and easy and the entire family loved it. I would probably cut back on the butter next time just to cut the fat. UPDATE 2006: I first rated this in 2002 and I thought I should update my review. I always cook my salmon this way. The only thing that I have changed is that I leave off the pecans and butter. I mix equal parts of the mustard and honey and spread it on the fish. My 8yr.old loves it so much that he will take the leftovers to school and eat them cold! Thanks again for this great recipie.

Easiest Teriyaki Marinade Ever

Reviewed: Apr. 8, 2002
Wow what a great marinade. I did switch the cinnamon with ginger and it was great. My kids (4 and 1 yrs.) loved it. It worked great on the BBQ and didn't burn easily like others do.

Aggression ( Oatmeal ) Cookies

Reviewed: Apr. 8, 2002
This recipe reminds me of what my mom used to call "Lace" cookies. It was very easy, but very messy. I'm going to try it in my bread mixer next time. We took the advice of early reviews and added vanilla, coconut and pressed it on a plate of sugar. We plan on making these cookies again and again.
