Spiced Pumpkin Seeds

This was easy to make and the flavor was good but I guess it is just a texture thing with me. I don't care for the way they chew up. It is like eating sunflower seed shells. My family thought they were ok. By the way an easy way to clean out a pumpkin is with a metal Ice Cream Scoop.

Southern Living Magazine's Chicken-Fried Steak

This is a great recipe!! My husband who is a chicken fried steak lover said it was perfect. I did follow some suggestions and use much less oil. Also my family has a favorite country gravy mix so I just used that but I mixed it in the skillet to get all of the left over "crunchy" in the bottom. With garlic mashed potatos this was a wonderful meal.

Angel's Old Fashioned Beef Stew

I thought that this recipe was delicious and so did my family. I did make a few adjustments though. I used my crockpot so I browned the meat in a skillet and when that was done I browned the onions and celery in the same skillet and scraped the pan real well to get all of the drippings. I let it cook all day on low THEN for the last half hour or so I turned it up to high and added the potatos and carrots so they wouldn't get too mushy.Also I seasoned the meat and veggies all separately while using low sodium broth. The taste was wonderful last night and I can't wait to taste it today at lunch!

Tofu Parmigiana

I enjoyed this very much!!! I used extra firm tofu and dried it on paper towels. I sparyed it with pan spray and rolled it in the bread crumbs. I only got a light crust and it wasn't very crispy but it was chewy and very good. It's nice to be able to add a new tofu recipe to my menu, and I'm just learning to expand my use of it. Thank you.

Hearty Meatball Soup I

What a yummy soup! Instead of making meatballs I omitted the egg and just crumbled the meat. I also used chicken stock instead of beef and the mushroom soup that I used was "Cream of Mushroom with Roasted Garlic". It was very salty but had great flavor. I served it with homemade garlic dinner rolls and waldorf salad. It was a perfect meal for a very rainy day. Update 2008: I added an extra can of beef broth and half a box of rotini noodles and made it like a stew. Still tastes great and is a nice variation.

Soft Pumpkin Cookies

I thought that these cookies were kind of bland even after I added cinnamon and nutmeg. I also put chocolate sprinkles on the tops. The cookies were kind of chewy, not a good chewy but a tough chewy. I won't make these again. It would be a better use of my pumpkin to make bread or pie.

Marshmallow Popcorn Balls

These were so easy to make! My 4 yr. old helped me and we added some orange coloring and chocolate sprinkles for Halloween. I used a bag of microwave popcorn and it seemed like there was too much marshmellow mix. Next time it will cut back on that.

Upside Down Pizza

At first, like a few other reviews, I saw this as just meat sauce without the pasta; but as I listened to my family who loved it I began to realize how much I really did like it. I have always thought that the pasta was secondary to the sauce and to replace it with a flaky crust is ok by me. I would skip the layering next time though and just pour the sauce all in at once. I did not have jar sauce so I added spices to a can of tomato sauce instead. I would also like to try some other pizza toppings to chunk it up some more. I will be serving this again.

Butter Cookie Crust

This is a tasty and easy crust. I used it for banana cream pie and it was wonderful. I added some chopped macadamia nuts (I got this from a favorite restaurants banana pie) and omited the cinnamon. It was wonderfully crispy and the nuts added a crunch. Yummy!

No Bake Cookies I

When I was a teenager my sister and I used to get up during a commercial break and while she was pouring ingredients in the pan I was stirring and by the time our show came back on everything would be melted together and we would eat them straight from the pan with a spoon. They never needed to set up because they didn't last that long. Now though as I make them for my family I am glad to have found the timing to make them set up. We used to add a little corn syrup to them but they taste just fine without it.

Ranch-Style Salad Dressing

I really enjoy this recipe, but it seems a bit runny. I also add some extra spices and fridge it for a bit to let it set up some. I love kicking it up and using it in a chicken pasta salad.

Asian Tuna Patties

I thought that this was a tasty and quick dinner. It was a little dry, but I had cut back on the oil. I used crushed seasoned croutons instead of bread crumbs for extra flavor and I left off the corn meal because I was in a rush. My 4 yr. old loved it and had seconds even the baby ate all of hers before she ate her fruit.

Roasted Lemon Herb Chicken

This chicken was great! I mixed all of the spices, olive oil and lemmon juice and rubbed it under the skin of the chicken and then over the top of the skin and poured the remainder in the cavity. I put about 3/4 cup water in the bottom of the pan and baked the chicken upsidedown with the breasts in the juices. I covered the whole thing in foil and in 2 hours the flavorful meat was falling off the bones. My company raved and everyone ate way too much. Served with baked apples, green beans and fresh bread. Delicious!

My family really enjoyed these apples. I aded some chopped pecans before baking for a little extra crunch. Next time I will cut down on the butter and add a little more cinnamon. Delicious!

Banana Peanut Butter Bread

First I have to say that this bread is delicious and I will be making it again. I used chuncky pnut butter also. The drawbacks are that it does brown way too fast(the foil remedy worked for that). I didn't bake it for as long as it said because when I checked it with a toothpick it came out clean and I was afraid of letting it get too dry. When it was cool and I cut it there was a big hole in the middle where it had undercooked. The problem is that if I had finished baking it the bread would have been dry. As it was, everything around the whole was baked perfectly.

Sloppy Joes II

This is a great sloppy joe recipe! My kids picked out the onion and bell pepper but ate every last bite of the meat. My husband and I loved this and I will be adding it to our dinner rotation. I did take the advice of a previous reviewer and add worcestershire sauce. I made hamburger buns with the Amish White Bread recipe and topped the meal off with fruit and a salad. Next time I am going to try it with ground turkey instead of the beef for a lower fat meal. Wonderful!

Lemon Drops

I'm glad that I read previous reviews before I made these cookies. I doubled the zest and added fresh lemon juice. They are still very light. Instead of the frosting, I glazed them with a powdered sugar and fresh lemon juice glaze. It gave them a little bit of a sour kick when you first put them in your mouth. I would also use a cookie press next time to make them look nicer since they don't spread out.

Focaccia Deli Sandwich

I have yet to make the sandwich. My comments are about the bread. This is an easy and very delicious bread to make. I make it to go with our spaghetti dinners or any italian meal. I don't bother to let it raise the second time. I just put it on the cookie sheet and put all manner of italian spices on it and throw it in the oven. We love to dip it in olive oil and vinegar while it is still warm. It doesnt last two days.
