Spicy Garlic Salmon
I made this recipe for my husband and mother in law (I don't eat seafood) and they raved and raved about it. My husband is a picky eater and he really enjoyed this dish. Because we like things spicy here, I added some sriracha sauce (instead of dried red chili) to the paste. Also, I don't have a mortar and pestle, so I wasn't able to grind things together. I used regular mustard.

Sausage, Spinach and Ricotta Calzone
This recipe is great! I did change things up, just a tad. When I sauted the spinach, I added a couple tablespoons of minced garlic. Instead of sausage, I used pepperoni. Since the pepperoni was already cooked, I just used a Tbsp of EVOO to the pan, spinach w/garlic and then added the water. I then drained the liquid and added the pepperoni. Also, once I made the slits on the top, I lightly buttered the top and sprinkled some parm cheese. Even my picky, pizaa loving husband enjoyed this.

Fat Pete's Fudge
This fudge is YUM-O!!! It's a lot of creamy goodness. :) It is definitely worth the arm work in mixing. I didn't add the peanut butter at the end because of time and it was quite dense once poured into the pan. This will definitely be somethine I make throughout the year.
