Party-Size Greek Couscous Salad

This one absolutely ROCKS, I take it everywhere, have passed the recipe out at least 5 times by request. It's also great if you have a vegetarian living with you...make one batch of this and it's lunch for a week. My mom commented that it's just like one of the salads sold at Whole Foods, only this doesn't cost $8/lb. I use Roma tomatoes rather than cherry tomatoes because they maintain their shape a bit better...and a word on couscous...make sure you check the outside of the box about how much one box makes. If you use Far East brand, you have to use 2 boxes instead of one. Two chopped red bell peppers seem to go over better than mixed ones. I also put in a larger container of feta. If your grocery store doesn't have greek salad dressing in a bottle, mix together 1/3c each of olive oil and balsamic vinegar and that works, too. When not making this for a party, I serve this as the side dish sometimes with "Cousin Cosmo's Greek Chicken," also on this site. We call it Greek Night, and my 3 kids LOVE Greek Night!

Hummus III

I made this as a pita-chip dip for 15 of my husband's college buddies at their annual fantasy baseball draft. I wanted them to have at least something that was healthier than pork rinds, but something a group of jocks would be OK eating. That was 5 years ago. At least three of the 15 guys remind me every year to "make that bad- hummus again." :)

Tasty Toothpick Appetizers

This is a GREAT recipe if you have school-age kids who love to help in the kitchen. Set up an assembly line, and watch them go to it! I have an 8 and a 10 year old who helped me make these for a dinner party. People thought the appetizers looked unusual, but once tried, they LOVED the taste and the appetizers vanished. This dish is also perfect in cases where you need something you can't keep hot, AND can't keep cold...they have a decent table life without having their temperature constantly maintained.

Best Ever Party Appetizer

I made this initially for a dinner party. Taste-wise, this was killer and there was none left. I got asked many times for the recipe. However, it was hard cutting goat cheese into cubes because the stuff is WAY too squooshy. What I did instead was take 1/2-teaspoons and roll them into balls, then toothpicked a slice of raw garlic to each one, and poured the marinade over top. Made it easier for people to get out of the pan. My Oscar night variation was to combine the goat cheese, sun-dried tomoato, oil and spices in a food processor, fill phyllo-dough shells with the mixture, and garnish each one with an olive slice and a slice of raw garlic. Tasted the same, and the phyllo crust gave it just enough crunch!

Apple Lasagna

My daughter's class was having a peach-themed party...I took this recipe and substituted canned peaches for the apples, and the dessert was a big hit! I do agree the noodles should be boiled prior, though, and that you will want to use double the amount of fruit in order to cover the fruit layers evenly.

Southern Made Cheese Ball

OK, this might sound gross, but...this thing was so great that me and the kids sliced up the leftovers and ate it for lunch! It was THAT GOOD!!!!!! yumyumyum.... THANKS!!!!!! :D
