Mediterranean Chicken and Couscous

This recipe was fast and couldn't have been any easier to make. I didn't have the Kraft dressing so I just subbed balsamic vinegar and added a little white sugar while cooking the onions just to cut the acidity. Overall, it was pretty good. Since it was so fast and easy, I'll definitely make it again.

Tortillas I

I grew up eating store brought tortillas and this was the first time I made them at home so I'm not really the most knowledgable on authentic tortillas, but these came out really good. I found that I needed more water than called for- over a half of a cup more! The only substitution I made was to use bacon fat instead of the shortening. My tortillas came out soft, pliable, and chewy (in a good way). I put the leftover tortillas and a damp paper towel in a ziploc bag in the fridge in the hopes that they'll stay soft and chewy when we finish the batch off this weekend. Good recipe that I'll definitely use again!

Best Brownies

The first bite I took immediately gave me diabetes BUT it was soooo worth it! These brownies were so amazingly good but way, way, way too sweet for my family. Next time I won't do the icing and maybe I'll add a few chocolate chips instead. I even left the honey out of the icing because I didn't have any in my pantry and it was still ridiculously rich. The brownie itself came out chewy and fudgy and just perfect. This will be my new go to brownie recipe. It was just as easy as the boxed stuff but so much better. Thank you for sharing!

Mexican Rice II

This is a pretty good basic Mexican rice recipe. I have tried many and haven't found any that were right or that my kids would eat but we all enjoyed this rice. I'll definitely make it again!

Apple Crisp II

I served this as dessert for Father's Day dinner and we all thought it was SO good! I followed others' directions and doubled the crust- putting one layer on the bottom and a second layer on top. I also added 1/2 tsp nutmeg, lessened the water to 1/4 c and used granny smith apples. It was EXTREMELY sweet and I'm not sure we would have been able to eat it if we didn't add a huge scoop of vanilla ice cream on top, which actually cut the sweetness. I'll definitely make this again but I'll use less sugar.

David's Yellow Cake

I'm a self proclaimed horrible baker. I somehow find a way to ruin everything I bake. It's a gift, I guess. So, when I decided to bake my first cake ever using this recipe, to be served at my daughter's 2nd birthday party, I expected a horrible disaster. What I got was the absolute best cake I've ever eaten and everyone at the party RAVED about the cake. Even my mother in law kept complimenting me on a job well done (you may have felt hell freezing over yesterday afternoon because of this, lol). The taste was amazing and the texture was perfect. This is it- my go to yellow cake recipe. The only change I made was to bake at 325 degrees but after 25 minutes when it still was looking very uncooked, I put the heat up to 350 and let it finish cooking. I put a thin layer of fresh, sliced strawberries between the cake layers with a thin layer of homemade buttercream icing that I found on this site, iced the whole cake, then put whole, fresh strawberries around the top of the cake. My favorite recipe from this site so far!

Grandmother's Buttermilk Cornbread

I'm not always overly dramatic about food (lie, yes I am) but I died and went to heaven. Perfection! I will use this recipe often for the rest of my life and, when I'm gone from this world, my kids and grandkids will make this recipe and good memories of being young and holiday dinners and Grammy's homemade cornbread (because I'm totally taking credit for this recipe in my family) will come flooding back to them. Thank you so much for sharing!

Greek Lentil Soup (Fakes)

The only change I made to the recipe was to use more carrots- I used 4, and I accidently put in 2 tbsp of tomato paste which I don't think hurt the recipe at all. My husband, 3 year old and 2 year old loved this soup. I really liked it too but I thought it was way too oily and I didn't even drizzle the olive oil on top after cooking. I'll definitely make this again but next time I'll use half of the olive oil and maybe throw in a few more carrots and it'll be perfect! Thanks for sharing!

Pollo (Chicken) Fricassee from Puerto Rico

I don't know if it's fair to give this recipe 5 stars even though I made some slight changes to it but the changes were slight and the end result was sooooooo good! The changes I made were: 1) Instead of using a tsp each of oregano and cumin, I used a tbsp each. 2) I forgot the bay leaves (oops!). 3) I didn't have fresh cilantro so I used 1 1/2 tbsp. dried cilantro. 4) I didn't have green peppers so I just used all red peppers. 5) I didn't have red potatoes so I used white potatoes. 6) I added a few manzanilla olives because of the other suggestions. Next time I'll make sure I have exactly what I need and try the recipe as written because when I winged it it was really good so I'm sure the original is even better!

Easy Meatloaf

I followed the directions and what I got was a super sweet, way too oniony, greasy loaf of mush. My husband never complains about food, even when he doesn't like something he still eats it, but even he couldn't eat this. Meatloaf should taste like meat and be solid, almost like a hamburger in loaf form. This is the worst recipe I've gotten from this site!

Farfalle Pasta with Artichoke Hearts

I have to admit that I don't usually use recipes from this site that have less than 40 reviews because I'm afraid of wasting food and more often than not when I follow a recipe exactly without using the changes that other reviewers have suggested, I'm usually very disappointed with the results. But, I had all of the ingredients for this recipe so I decided to give it a go because if it wasn't good then I was only really wasting a box of pasta and some artichokes. I'm SO happy I tried this because it is delicious! I will absolutely save this recipe and make it often. Thank you for sharing, James!

Strawberry Pie II

I don't know what I did wrong but I followed this recipe exactly and it came out way too liquidy. I poured 2/3 of the strawberry mixture over the fresh strawberries and my pie was overflowing like crazy. I thought maybe if it sat in the refrigerator long enough it'd be soaked up or set up or something but it didn't. It was just a sloppy mess, a really delicious sloppy mess, but still a sloppy mess. I dumped the other 1/3 of the mixture which is a total waste of strawberries. I served this and those who weren't afraid to drip strawberry syrup all over themselves said that it was good. But, even though the taste was good, I doubt I'll make this recipe again. I'm sure I can find a better one.

Graham Cracker Crust I

Awesome, awesome recipe! I usually buy store made crust but I recently got a food processor (I know, welcome to the 20th century lol) so I thought I'd try to make a homemade crust for a peanut butter pie I was making for a 4th of July BBQ. I used chocolate graham crackers but followed everything else exactly and it was just perfect! I'm definitely not going back to store bought graham cracker crust again!

Peanut Butter Pie

I made a homemade graham cracker crust that I found on this site (so easy to make and a hundred times better than store bought!) with chocolate graham crackers and the rest of the recipe I followed exactly. It came out pretty good but not enough peanut butter taste for me. It tasted like a peanut butter cheesecake, which is NOT a bad thing but, not exactly what I wanted. Next time I'll use this recipe as more of a guideline and the only change I'll make is to use less cream cheese and/or more peanut butter. Other than being to cheesecake-like for me, it came out perfect! The texture was great and it set up wonderful in the refrigerator after only 3 hours (we couldn't wait any longer to eat it lol). When I feel like having cheesecake I'll definitely make this because it was so good!

Awesome Pasta Salad

At first I was like "Who in the world needs a recipe for pasta salad. It's just noodles, random veggies, some cheese and dressing." But after trying many times and failing to get pasta salad right I decided I wanted to try a recipe for my daughter's birthday and I'm glad I did. As far as pasta salads go, this was awesome. I really enjoyed it as did everyone at my daughter's birthday BBQ. It's so simple yet so good. This will be my new go-to for potluck BBQ's!
