Awesome Pasta Salad

At first I was like "Who in the world needs a recipe for pasta salad. It's just noodles, random veggies, some cheese and dressing." But after trying many times and failing to get pasta salad right I decided I wanted to try a recipe for my daughter's birthday and I'm glad I did. As far as pasta salads go, this was awesome. I really enjoyed it as did everyone at my daughter's birthday BBQ. It's so simple yet so good. This will be my new go-to for potluck BBQ's!

Greek Orzo Salad

I thought this recipe was just okay. It could have been the lemon pepper seasoning I used because they're all so different. Or, it could have been the fact that my artichokes weren't marinated, which I think was a good thing because the seasoning in the marinated artichokes along with the lemon pepper, oregano, and parsley would DEFINITELY have been too much spice. I don't know what it was, I can't quite put my finger on it, but I was not a fan and neither was anyone else that tried it at our family BBQ. I'll keep looking for "the" pasta salad recipe!

Mexican Rice II

This is a pretty good basic Mexican rice recipe. I have tried many and haven't found any that were right or that my kids would eat but we all enjoyed this rice. I'll definitely make it again!

Mojito Fruit Salad

I love mint and mint flavored everything but I thought the mint in this recipe was too overpowering. I brought it to a family gathering and the rest of my family ate it and said it was good but my family, when they like something, they usually "yummmm" and "yeeeeah" and "ooooooo" and talk about it for a long time. They didn't do that. They ate it but there were no reactions. This was just ok. I would try to make it again but I'd strain the mint out and maybe add honey instead of sugar.

Restaurant-Style Coleslaw I

Perfect! I'm not a coleslaw fan but I made this for my husband and sister who both love their coleslaw and I was so surprised at how much I enjoyed it. Everyone who ate it raved about it. It's the best coleslaw I've ever eaten. It's not too sweet, not to tart, not to mayonnaise-y. It's a keeper!

Apple Crisp II

I served this as dessert for Father's Day dinner and we all thought it was SO good! I followed others' directions and doubled the crust- putting one layer on the bottom and a second layer on top. I also added 1/2 tsp nutmeg, lessened the water to 1/4 c and used granny smith apples. It was EXTREMELY sweet and I'm not sure we would have been able to eat it if we didn't add a huge scoop of vanilla ice cream on top, which actually cut the sweetness. I'll definitely make this again but I'll use less sugar.

David's Yellow Cake

I'm a self proclaimed horrible baker. I somehow find a way to ruin everything I bake. It's a gift, I guess. So, when I decided to bake my first cake ever using this recipe, to be served at my daughter's 2nd birthday party, I expected a horrible disaster. What I got was the absolute best cake I've ever eaten and everyone at the party RAVED about the cake. Even my mother in law kept complimenting me on a job well done (you may have felt hell freezing over yesterday afternoon because of this, lol). The taste was amazing and the texture was perfect. This is it- my go to yellow cake recipe. The only change I made was to bake at 325 degrees but after 25 minutes when it still was looking very uncooked, I put the heat up to 350 and let it finish cooking. I put a thin layer of fresh, sliced strawberries between the cake layers with a thin layer of homemade buttercream icing that I found on this site, iced the whole cake, then put whole, fresh strawberries around the top of the cake. My favorite recipe from this site so far!

Smooth Sweet Tea

I never made homemade iced tea with real tea but I thought I'd give it a try because I was having a southern BBQ themed birthday party. I followed the recipe exactly but doubled it to make a gallon. There were only 10 people at the party so I didn't expect much of it to be drunk but the whole pitcher was gone within a few hours. It got a lot of compliments! Personally, I'm not a fan but it's a nice change from the usual juice and soda served at most BBQs.

Smooth Buttercream Frosting

The only change I made was to use all butter instead of shortening. This icing is sweet, but it's icing- it's supposed to be sweet! This recipe made EXACTLY enough to ice an 8 inch double layer cake. It went on smoothly, looked pretty, and tasted great. As a novice baker I really appreciate when things are as easy and turn out as well as this buttercream icing has for me. Thank you!

Classic Macaroni Salad

I cut the sugar to 1/4 c but I found it still WAY too sweet for my taste. My kids won't eat it because it's too sweet for them too but my husband likes it, so it's not a total waste. I like that it thickened overnight and I think it'll really be good next time if I cut the sugar down even more to maybe 1 or 2 tbsp. This definitely won't be my go to recipe but now I have a better idea of what I want and how to get there from here.

Lentil and Green Collard Soup

Holy salty!!! I followed the recipe exactly except I used less lemon (I squeezed the juice of half of a medium lemon) and I sauteed the garlic with the onions. The flavor was really good but it was way, way, waaaay to salty. I had to add another 2 1/2 cups of water to try to dilute it and it was still really salty and I'm saying this as someone who drinks pickle juice (yes, I know it's gross lol) and puts salt on everything, so I'm not sensitive to salt. Besides being too salty, it was really good. My husband and daughters didn't like it but I'll probably try to make it again and use at least half of the salt and maybe add in some carrots.

Greek Lentil Soup (Fakes)

The only change I made to the recipe was to use more carrots- I used 4, and I accidently put in 2 tbsp of tomato paste which I don't think hurt the recipe at all. My husband, 3 year old and 2 year old loved this soup. I really liked it too but I thought it was way too oily and I didn't even drizzle the olive oil on top after cooking. I'll definitely make this again but next time I'll use half of the olive oil and maybe throw in a few more carrots and it'll be perfect! Thanks for sharing!

Tortillas I

I grew up eating store brought tortillas and this was the first time I made them at home so I'm not really the most knowledgable on authentic tortillas, but these came out really good. I found that I needed more water than called for- over a half of a cup more! The only substitution I made was to use bacon fat instead of the shortening. My tortillas came out soft, pliable, and chewy (in a good way). I put the leftover tortillas and a damp paper towel in a ziploc bag in the fridge in the hopes that they'll stay soft and chewy when we finish the batch off this weekend. Good recipe that I'll definitely use again!

Mama Corleone's Sausage and Peppers

A decent recipe to use as a jumping off point. It was just okay, kinda bland. Next time I'll use more seasoning (probably fresh instead of dried), definitely MORE garlic, and maybe some onion and crushed tomatoes.

Pollo (Chicken) Fricassee from Puerto Rico

I don't know if it's fair to give this recipe 5 stars even though I made some slight changes to it but the changes were slight and the end result was sooooooo good! The changes I made were: 1) Instead of using a tsp each of oregano and cumin, I used a tbsp each. 2) I forgot the bay leaves (oops!). 3) I didn't have fresh cilantro so I used 1 1/2 tbsp. dried cilantro. 4) I didn't have green peppers so I just used all red peppers. 5) I didn't have red potatoes so I used white potatoes. 6) I added a few manzanilla olives because of the other suggestions. Next time I'll make sure I have exactly what I need and try the recipe as written because when I winged it it was really good so I'm sure the original is even better!
