Zucchini Brownies

These were a HIT! I followed the recipe exactly as written and they came out GREAT! No one even suspected there was something HEALTHY hidden inside! :) The frosting is awesome too! Definitely a KEEPER!

Basmati Rice Pilaf

This is a good basic recipe but I made the mistake of making it with brown basmati rice which I've found out take much more water to cook properly. I followed the recipe and luckily checked on it while it was simmering and found that all of the water was gone and the rice had started to burn. I added more liquid and was able to save the dish. It took much longer to cook though also. Lesson learned. I would give it more stars if not for this mishap.

Grilled Salmon I

This was delicious! I baked it in the oven at 375 wrapped in foil. Poured all the marinade in with the fish. It turned out fabulous! I know it's a hit when all 3 of my kids gobble it up!!! Definitely a keeper! In fact my family asked me to make it again next week! Thank you!!!

Braised Balsamic Chicken

I thought this was OK. Not one of our favorite meals. Followed recipe except used garlic instead of garlic salt. And cut balsamic in 1/2 and substituted chicken broth for the other 1/2. It was tender. But not a huge fan of the flavor.

Sirloin Steak with Garlic Butter

These steaks turned out delicious!! I softened the butter and mixed the garlic into it. Then I put a small scoop of garlic butter on top of each steak after removing them from the grill and let it melt in. Yummy!! My kids loved it too! Definitely try this recipe! You won't be disappointed!

Quinoa Pilaf

Delish! My husband and I thought it was great. I didn't put walnuts or parsley on it. My kids tried it but weren't loving it. But I'll try again and hope they'll develop a taste for it. I used olive oil instead of vegetable oil. I also added some garlic when I sauteed the onion.

Bananas Foster Belgian Waffles

I only tried the waffle recipe- didn't make the banana topping. The waffles are very easy to make! They do have a very eggy flavor to them.... almost like french toast. Next time I will add some cinnamon to the mix to try that. They are also very heavy and I found leaving them in the waffle maker a little longer made them more crispy so they didn't get soggy quickly.

Fluffy Pancakes

Yummy! My family loved these pancakes! I was out of oil & found this recipe with butter as an alternative! Delish! Next time I will double it and add a little vanilla as another reviewer suggested! Thank you for an excellent recipe!!

My kids and I really liked this recipe. I cut it in 1/2 and made a few minor alterations by adding a little extra brown sugar and I used only a 1/2 an onion and left out the onion powder. I'm very happy to have found this recipe! Yum!

Simple Baked Apples

This was only ok. The nutmeg & cloves were overbearing. I didn't think the milk added anything to the recipe. I used brown sugar instead of white but it still wasn't my favorite. My family didn't care for it much either. Disappointing.

Blueberry Party Salad

I brought this to a 4th of July party and it was a huge hit! Everyone asked me to make it again for future parties! Great summer dish! Definitely chill between layers. Next time I will look for a blue colored gelatin to make the blue layer more blue. Delish! UPDATE: I have made this 3 times. Tried it with blue raspberry jello for the blue layer and it didn't turn out very blue- better to stick with the red raspberry. I also tried using the low-fat/Neuschaftel cream cheese and it doesn't work well- very lumpy and not a good choice! Also- use cool whip for the top layer and decorate with blueberries & strawberries. You can make a star pattern if you don't want to make a flag.

Peach Cobbler V

I made 3 batches of this cobbler this morning with fresh peaches from our tree. I made recommended changes according to other reviews by adding 1/4 cup sugar to the peaches & 2 t. cinnamon. I also used 4 cups of peaches instead of 3. I used 2 t. of baking powder and 1 1/4 cups of flour. This is a very good recipe. Not too sweet- which my family prefers. I took it out of the oven 10 minutes early because the top was getting brown and I didn't want it to burn- but the middle was slightly mushy still. Next time I will cover with foil for the last 10 minutes instead. Thanks! Very simple and YUMMY cobbler!

Grilled Tropical Tuna Steaks

I made this recipe with a few changes to work with the ingredients that I had in my kitchen. I used apricot preserves, lemon instead of lime juice, olive oil instead of sesame and I didn't use fresh cilantro or ginger (I used spices from a jar). The marinade was very tasty. Unfortunately my fish turned out dry. I think I may have cooked it a little long? I also broiled the fish instead of grilling- that may have been a factor? Overall I think this is a good recipe- I'm unsure if I will try it again. My kids (ages 7, 4 & 1) weren't thrilled with it.

Garlicky Baked Butternut Squash

Not one of our favorite recipes. We usually love Butternut Squash but this was a waste of a good vegetable. TOO much oil. I'm going to try to save the leftovers and puree it into a soup....hopefully that will work!

Whole Wheat Blueberry Pancakes

Delicious! I made these for dinner tonight- doubled the recipe. I used fresh blueberries- smashed them a bit after I added them to the batter. Also I used vanilla soy milk b/c of dairy sensitivities. I added 1 tablespoon of oil and 1 teaspoon of vanilla. I also used brown sugar instead of sugar substitute. They turned out great! My entire family loved them!

Tomato Basil Pasta

We loved this recipe! I sauted some shrimp with onion powder and omitted the onion in the recipe (since my hubby doesn't like onion). I also used grape tomatoes halved and seasoned feta. Delicious! I will definitely make this again! We had the left overs the next night cold and it was just as yummy!
