Alaska Salmon Bake with Pecan Crunch Coating

I am completely addicted to this! I used already prepared honey mustard (I bought from tastefully simple), mixed the bread crumbs in with the mustard mixture it was FANTASTIC! Thank goodness my Dad goes Salmon fishing & shares his catch with me (it's best with fresh Salmon). Thanks so much Chris, this is better than what I've paid $25 for in a resturant!

Favorite Hot Cocoa

A-Number-1 Banana Cake

Good cake! I cut it in 1/2 & baked in in an 8x8. I omitted the egg due to my "Little Cheese" (my nickname for my son Colby) being allergic, and used an extra banana & a 1/2 tsp of baking powder. Very moist, I liked the fact that there is no oil. I topped it with allspice cream cheese frosting (from this site), next time I'll do muffins. Thanks Kevin!

Focaccia Deli Sandwich

Look out Quiznos! This sandwhich is great. I used light mayo & fat free cheese (and it was still great). I also used left over focaccia bread from last night and vlasic hot pepper rings (already sliced pepperonchinis). Thanks SLM!

Layered Spinach Mostaccioli

I love spinach, so therefore, this was a good recipe for me. My children like raw spinach, not cooked, so I did the OBVIOUS adding it to a 1/4 of the caserole dish (using 1/4 spinach called for as well). I used my own meat sauce, which also included sausage and that was a great addition. This was an easy alternative to lasagna and I didn't have to hear 1 single complaint. I think that the 8 oz. box of pasta is a mistake, I normally use 16 oz. and it feeds the 4 of us + the baby (I have what my husband would have eaten left over, as he is out of town on business[again]). I will use this again, thanks Jo!!

Cheesy Mexi-Rice Casserole

I LOVED this! I printed it a while ago, and just got around to making it tonight. I didn't read the reviews, and as I was eating it, I thought, "this would be great with chicken added" (see if I had read them, DREGINEK could have clued me into that one, great minds think alike, but ya beat me to it :) I skipped the extra can of chiles, because I didn't have them and I also used minute rice because it's all I had. When I reheat them, I'll do so in a soft tortilla shell. Loved it, thanks M.

Marian's Creamed Corn

Loved this corn - all of us, even my husband (he had 3 helpings). I did only add 1 tbsp of sugar, and added 1/3 less fat cream cheese, and it is gone. I also used canned corn, 2 cans, because it is more crisp than frozen. Thanks DAS!

Garlic Mashed Potatoes

My clan ate these up without 1 single complaint (RARE). I boiled the garlic cloves (3) in the potato water and then just mashed them up (with the hand mixer) along with all of the other ingredients. I did add more milk (skim), butter & white pepper. Thanks Lorna!

Six Can Chicken Tortilla Soup

I'm nursing a girls night out "head trauma" today (those raspberry margaritas get me EVERY single time), so I was looking for something EASY. I used perdue shortcuts southwest seasoned chicken pieces vs. the canned chicken, and added 2 tbsp. of chopped FRESH cilantro (ya can't beat it) and a minced clove of garlic. It was soooo tasty. I didn't have any diced tomatoes with green chiles, just "Rold Gold Mexican fiesta w/ cilantro & lime juice" (which I didn't drain when I added it) so I added a minced jalapeno pepper as it was still simmering (after I had eaten) and I'm looking forward to the spiced up version tomorrow. Top it with shredded Montery Jack & crushed tortilla chips, mmmmmm- Thanks Terryn, I loved it!

Easy Chili I

Nice easy chili, this is almost the same chili that I grew up on (with the exemption of the jalapenos). I used 1 tbsp of cumin, 1/2 tsp of oregano and 2 cloves of garlic, although it coulda used 3. I seeded the jalapeno and didn't find it that hot, so next time I will just chop up the whole thing and add maybe 3 tbsp. of chili powder (the way mom used to). As with all sauces & chili make sure that you adjust the seasonings before serving. (I am full from all the taste testing, so I had to skip dinner tonight, tomorrows lunch for me). Texas Ranch Chicken

Loved it! My husband is (again) out of town on business, so I decided to try it as he doesn't like cheese anyway. I used the ranch dressing II, from this site, because it is really thick, and I skipped the oil, using pam cooking spray in it's place. I also added broccoli & carrots to the dish & it looked as good as it tasted! Thanks Jan!

Chewy Peanut Butter Brownies

These are GREAT! We are all peanut butter lovers, well except for the baby...he's allergic. I used about 3/4 cup of peanut butter and frosted them with chocolate frosting. MMMM. Thanks Jo.

The Best BLT Dip

This is similar to another recipe on this site (blt dip) and the results are pretty much the same, although I liked the garlic powder addition. I again used "real bacon bits" (oscar mayer) and added some Tastefully Simple Bacon Bacon. For those who had a problem with the dip tasting like mayo, it really should be refrigerated for a few hours before serving, or even tasting it, as the flavors really need to meld. Thanks Christine!

Asparagus with Parmesan Crust

This was a treat! It's not often that I make asparagus, and I just love it. I agree that you really do need a good balsamic vinegar. My husband won't eat cheese (or asparagus for that matter) so I made him an artichoke, but I really loved this, the pepper added a small kick, mmmm. Thanks Kimber!

Baked Tomatoes Oregano

WOW I really liked this one. Hubby took the kids bowling (well except the baby) so I scaled it down & made it for me, and it was even better than I thought it would be. I used roma tomatoes (2) & layered it in a remekin (tomato, cheese, parsley, garlic, crumb etc.) until it was full & baked it in my toaster oven (for the sake of ease). Very good light dish, can't wait to have it with homegrown tomatoes and some crumbled feta cheese! Thanks Michele!

Carrot Cake III

I changed this recipe, merely because I had extra apple sauce, and I have an egg allergic baby. So what I did was: I used left over "sarah's applesauce" (from this site) for the oil & two ripe bananas for the 2 eggs (I cut the recipe in 1/2 & baked it in a 8X8). We loved it. I did cut down on the powdered sugar by 1/2 cup & added more cream cheese, but it was great. This made alot of frosting, like to frost 1 1/2 (8x8) cakes, but we like it very frosted (although I'm gonna have to do an extra work out to get that off...again) worth it. Thanks Tammy!!

Butter Crescents

YUM! The kids dug right in to these. I cut the recipe in half and made 8 pretty nice sized cresents. My only complaint is that they needed more butter flavor. I only added an egg yolk, (because I had separated & used the white for a different recipe & cutting it in 1/2 called for 1/2 egg)... ANYWAY, I brushed butter on the top before baking instead of the egg. Good recipe Rita, thanks.

Creamy Rice Pudding

Ohh yum. This is good. My hubby is out of town & here in Chicago it is about 3 degrees, and as I'm stirring this pudding, I hear what appeared to be gun shots coming from my garage (mind you, I live in a VERY quiet neighbor hood)....well ha, it was my diet cherry coke, (my all time favorite) in the garage fridge... EXPLODING! UGH, what a mess! Well the pudding was very good, my mom used to make it similar to this. Yum, comfort food. Thanks Erica. And D...good luck with that blender ;)
