Jen's Fresh and Spicy Salsa

Mmmmm, love salsa and this was a good hot one. I added two small serrano peppers in addition to the jalapeno's (from the garden of course) and whew it's hot. You really need to let the ingredients meld before trying, otherwise it will taste like lime/tabasco. I also used fresh minced garlic. Great recipe J!!

Spicy Burgers

This is one of the best burgers I've ever eaten! I love jalapeno burgers when we eat out, just never thought to mix them in on my own. Loved the cilantro in this! Excellent recipe, thanks Tom.

One Minute Chocolate Icing

Ha....I halved this recipe, but didn't halve the sugar....which would be the reason that it was "gritty"....duh. Aside from that...had I done it right this was an easy excellent recipe. Oh, during the mixing, which I did in the kitchen aid I added a splash more milk and that took care of the thickness. I topped "deep dish brownies" (from this site) and it came out fab. Thanks Sandy!!

Orange Cream Fruit Salad

Lori, I'll tell ya, this salad flew out of the bowl! I used sugar free pudding, cut the milk to 3/4 cup, and the sour cream to 1/2 cup. I soaked the apple (which I didn't peel) and banana slices in the pineapple juice to prevent browning, and I added strawberries, blueberries, red and green grapes, pitted cherries, and instead of using canned peaches, I chopped a large fresh nectarine. Before adding the pineapple, oranges, apples and bananas I patted them dry with a paper towel to get out the extra juice. I didn't have a problem at all with it being liquidy as it was eaten up quickly. Excellent recipe, will use again..thanks!

Mushroom Gizzards

My husbands Polish Grandma used to make this for him all the time.....so I decided to give it a stab....and he loved it!! I did add some fresh chopped mushrooms to the concoction, as well as some additional spice to the flour. I also served atop rotini noodles....Thanks Barbara, for pleasing my DH!!

Grilled Salmon with Cilantro Sauce

I love salmon, and I love cilantro so I figured I couldn't go wrong here! Good recipe, I used this jalapeno "relish" stuff (which includes chopped onion & red bell pepper)that takes up residency in my fridge, and that worked out great for this recipe. I would recommend adding some garlic. Thanks T&J!

Hot Mexican Spinach Dip

This to my suprise flew out of the dish! I made this simply because I love all of the ingredients in it, had them on hand and as a taco dip compliment. I stuck all of the ingredients in my mini crock pot and warmed it up.....tasty stuff....I used fresh spinach....which I didn't cook, but chopped and I think I saw someone sticking their finger in the dish to get that last little bit.....hmmmm. Mexican Rice III

Alana, your one lucky girl, this rice is very tasty!! LOVED the cilantro in it! Mine was a little dry at serving so I added a 1/2 cup of left over tomato sauce to moisten it up.....the bomb! Thanks so much!!

Refried Beans Without the Refry

Excellent. Life saver. Thank you! My Mom forgot that she was going to make the beans for my Mexican "Fiasco" and I ran to my local pantry and picked up the pinto beans.....threw these in the crock pot 10 p.m., the next morning....mmmmm smelled so good. I used 1 cup of the reserved liquid, stuck them in the kitchen aid to "mash" them and they were perfect. Got many compliments on this very easy recipe! Thanks CHEFCLAUDE!!!!! Your my new favorite!

Gerry's Chicken Enchiladas

Gerry, THANK YOU!! Everyone at my Mexican Fiasco....ahem, Fiesta requested the recipe on this!! I used "red Gold petite diced mexican fiesta" tomatoes, with lime and cilantro juice....didn't drain and I browned the chicken and threw it in the crock pot with the soup mixture for a few hours, the chicken shredded nicely and was incredibly tender. Excellent, Thanks!

Monterey Jack Salsa

Huh...who woulda thought?? This IS fabulous, and received compliment after compliment. I did however skip the MSG and added salt in it's place. I actually thought of tossing this with some pasta for an easy dinner for tomorrow. I ended up using Kraft "crumbles" for the cheese which worked very well in this. Next time I will add red onion and jalapeno. Thanks so much Debra for the nice salsa alternative....LOVED it!!

Crazy Crust Pizza Dough

For as easy as this recipe is....my 5 year old made it, I'm not sure why it would get 1 star. I used bread flour, all I had and it came out good...even the next day it was good. I think the fact that it bubbles up may just be the reason that it is called "crazy crust pizza dough." Anything that will bring that big of a smile to my son's face...because he did it on his own is worth 5 stars to me! He has already asked to make it again because he really liked it. Actually I am going to be making a pizza dip and I think that this crust will be good for dipping.....mmmmm. Thanks Karen!

Banana Blueberry Muffins

Ok, any one who is familiar with the movie "Charlie's Angels", and remembers the part where Alex (the Lucy Liu character) bakes muffins and Dylan (Drew Barrymore) throws one at Natalie (Cam Diaz) and it sticks in the door.....LOL, that's sorta what these reminded me of. BUT, for as healthy as they are, with low calories...I'll take it! I did use egg beaters, which could be why they were a bit dense, but my 5 year old who can finally eat eggs really liked them....actually he made them. Next time I will add nutmeg and maybe another banana + more vanilla. Thanks for the nice recipe!

Pork Tenderloin with Creamy Herb Sauce

This right here is some tasty eats! I used fresh parsley (more of it), white pepper (which gave it a little zing) and I sliced the carrots instead of mincing them and finagled it on the grill...because it is a bit warm outside..turned out awesome!! Thank you so much Carrie, I will be using this again.

Grilled Chicken with Herbs

UNBELIEVABLE!! Tender and tasty....and nice and light! I had to scale the recipe for 2 servings, but it turned out to be outstanding. I paired this with a baby greens salad topped with the Raspberry Vinegarette dressing from this site for a delicious meal. Thanks Robyn, I will be using this again!!
