Cajun Style Burgers

Good burger, even with the egg. I will say that I'm not much of a fan of "egg burgers" but this went well all around. My daughter is non-onion tolerant (meaning she's too picky to eat them) but she is coming around when it comes to green onions, so these went over well. Next time I'll spice mine up a little more, maybe it was my cajun seasoning, but it didn't have the kick that I expected. Topped with a slice of monterey pepperjack cheese....mmmmm. Thanks Gail!!

Grilled Cabbage I

I didn't get to try this..but only because my husband ate it all. =0. He loved it! Well before everyone thinks that he is a pig (actually he is almost a clone of Nick Cage), I scaled the recipe down to use the 1/4 of a "small" head of cabbage that was left over. He said that it was really good & to do a repeat, which is all good to me! Thanks Gail!

Drunken Grilled Asparagus

I gave this four stars because I threw some chicken breasts in with the asparagus and the marinade produced the most tender chicken breast that my husband has EVER grilled, which says alot because he always overcooks chicken (especially when he's grilling). I could have taken or left it on the asparagus, & I love asparagus (it was just kinda too sweet), but worked well with the chicken, thanks Denyse, my 11 year old ate 2 chicken breasts...RARE!

Pork Loin Stuffed with Spinach

I loved the spinach filling in this, however, the sauce didn't do much for me. I actually made this last thurs, and I wasn't sure if it was my buds, or if there was a "taste" that I just wasn't sure about. It was the "taste" & I'm not exactly sure what it is, but I know for a fact that it isn't the filling. I added water chestnuts to the filling, because I had an extra can starring me in the face. The roast itself came out very tasty, nice & tender, but if I were to make this again, I would use olive oil (like in the roasted pork loin, from this site) instead of the sauce because that roast came out fantastic! Use a meat thermometer to ensure proper cooking time & your roast will not be dry. This would be equally great with pork chops as other have suggested! Thanks Mariah!

Macaroni And Cheese II

I was attracted to this recipe because it doesn't call for eggs (baby is allergic) and I'm not at all sorry that i opted to go with this one. Not only was it tinker toys to make, but I had everything on hand to whip this up quick. I liked the bread crumb topping & I will double it next time. Thanks Corwynn- 2 for 2!

Beer Batter Fish Fillets

Good batter. I took into consideration that the batter may be thin, so I added a little less beer & milk. I also added garlic & onion powders. It did need a little more flavor, but it renewed my faith in frying, because it came out nice & crisp and totally stuck to my white bass. I will use this again, thanks Karen!

Parsley Potatoes

These were okay, for as much as I love fresh parsley in dishes, I thought that these lacked flavor. I actually have this exact recipe (word for word) on an "easy everyday cooking" card (that I purchased) & the picture on the front of the card looked sooo good, but the end result needed something...like cayenne or something. I'm wondering if you submitted the recipe to easy every day cooking Hallie.

Honey Glazed Pea Pods and Carrots

I really liked these! I used "tastefully simple" (a product from a taste testing party) honey mustard and WOW was I impressed with the outcome. It was a great along side of a pork roast. Thanks Michele, I'll be using this again!

Roasted Pork Loin

This is soooo tender & juicy. WOW! I used chicken broth instead of the wine. I do have a comment about the cook time, I used my corning ware & on average, whatever I make in a corning ware dish usually takes about an hour longer to cook. So maybe that is the reason that some had a problem with dryness using the 2 hour cook time. I also used common sense & stuck a meat thermometer in the roast. This was a good roast, thanks Kathleen!

Delicious Black Bean Burritos

Anyone who knows me can tell you that I LOVE black beans AND fresh cilantro AND tortillas, so when I find a recipe that contains ALL of them, I'm a happy camper! This is a great twist on a burrito even though I cheated. I used frozen diced onion, green & red peppers, and then used a tsp. of jarred hot giardinera relish for the pepper. But I only did this because I didn't have time to do all of the chopping. I had some left over cream cheese & cheddar cheese mixture (from poppers made over the weekend...a good way to get rid of it) and that did the trick. Very good, although as it cooled it became very thick, so I topped the mixture with taco sauce...YUM. I may give this a try as like an appetizer as well, refridgerate & then slice. Thanks jessie!

Horseradish Corn on the Cob

Corned Beef and Cabbage II

It was soooo beautiful here in Chicago yesterday (I'm wonderin' what happened today) that I started the meat in the crockpot at 11 a.m. went outside & forgot about it until I came in and took a whiff of the awesome aroma that it produced. I used beef broth (low sodium) instead of the water and added the veges & potatoes at about 3p.m. (I served at 6) I used Vienna corned beef because the last time I skimpped, it was very tough, not this time...it was so tender & tasty. Caramel Filled Chocolate Cookies

These are great cookies! I didn't let the sticky dough stop me, actually I made these Friday night when I had a house full of kids and it was hard to ward them all away so that I could get one! I split the dough into 12, then into 24, smushed 1 piece down in my hand stuck a Rolo in the middle, topped it with another piece, rolled it and plopped it onto the sheet. The kids all LOVED these, thanks Lisa.

Individual Baked Eggs

EGG-CELENT!!! This worked out great this morning, as I had 9 hungry kiddies (3 being my own, the rest = 4 nieces & 2 nephews) to feed. I alternated scrambled & sunnyside. Plopped them out on to an english muffin and the kids were all impressed: "Aunt Mick is the bomb"! I left 1 tin in the oven a little longer & got a hard yolk (like hard boiled) mmmmm. Thanks Shirley, for the easy recipe & saving me from being a short order cook!

Black Bean Cigars

It rocked, just ROCKED. I just bought the potato patties from market day, so they were on hand for my "meatless" lunch. I scaled the recipe to 1 (for my lunch today) and only used 1 patty. I topped with enchilada sauce & sour cream. Thanks so much DeeDee!

Best Carrot Cake Ever

This is a good carrot cake, but not the best ever. Waaaayyy to much oil. It was very dense, and this may sound wierd, but it was too moist. Almost like it wasn't cooked (& yeah it was). Thanks anyway Nan. ;)
