Easy Pork and Sauerkraut

Reviewed: May 1, 2003
I loved the addition of all of the spices in this dish, comparred to other simular recipes from the site. I used a bottle of Sam Adams Cranberry Lambic, and that made for a wonderful tasting roast. If your roast came out dry, my suggestion would be to use the entire 12 oz. of beer, otherwise there will not be enough liquid, hence the dry roast. Good recipe Bianca, served with mashed potatoes & applesauce as suggested = yum. Thanks! (Hi Manda, the point of the apple is to take the tart out of the sauerkraut. Happy Cooking, better luck next time ;)

Gourmet Chicken Sandwich

Reviewed: Apr. 29, 2003
Good eats. I used Dijonnaise and just added rosemary to that (hey, I'm all about ease over here). I also used perdue thin cuts (thinly cut chicken breast) to save time in the "pounding" area. I used the "easy focaccia" bread recipe from this site (with garlic added) and set out other condiments as in; tomato slices, romain lettuce, sliced red onion, etc. so everyone could create their own. Thanks Lisa!

Easy Focaccia

Reviewed: Apr. 29, 2003
Good bread Jack! The dough was rather unruley, but it turned out good. I added the rosemary, along with some Italian seasonings into the bread as well. One question...are ya supposed to remove the pan of water before baking? I didn't & it did come out fine, but I thought it to be odd. Thanks for the recipe, I too am going to try this as a pizza crust. ;)

Italian Roast Beef I

Reviewed: Apr. 28, 2003
My family & I really enjoyed this one! I started it in the crock pot at noon put it on high & went outside to enjoy the beautiful weather, came in around 3 p.m. turned it to low, added quartered red potatoes, & sliced carrots, YUM! I used "Italian Dressing Mix" (from this site) for the dry italian mix and because that has a significant amount of oregano & basil, I didn't add any extra. I used 1 can of reduced sodium beef broth instead of the water & 2 bouillon cubes and I will cut the oil amount in 1/2 next time because I thought it to be too much. The roast (I did use a rump) came out very tender & juicy, not much left over and I had a 5.5 lb. roast! Will make again! Thanks Michelle!!

Ham, Potato, and Cheese Soup

Reviewed: Apr. 25, 2003
LOVE this soup!! I had an extra ham bone (well my mother-in-law gave it to me) so I simmered it for a few hours w/ 6 c. of water, 2 carrots, 2 celery stalks (w/ leaves), and an onion (discarding the veges before adding the other ingredients). Doing this made an excellent broth, enhancing the flavor of the soup even more. I skimmed out most of the onion before adding the cheese because there was WAAAAYY to much. Next time I will add celery & carrots as well & maybe mash up a few more potatoes to thicken it some. Thanks Donna, this is a great tasting soup!

Herbed Cheese Whole Wheat Breadsticks

Reviewed: Apr. 25, 2003
These are great....if you like to eat straw! I'm not sure if it was something that I did or what, but I didn't like them at all! I'm a big wheat bread eater, so I'm a bit surprised. My daughter liked them right out of the oven, but as they cooled she thought differently (straw). Thanks anyway BH&G.

Taco Seasoning II

Reviewed: Apr. 23, 2003
I decided to try this because my 11 year old complained that the seasoning that I usually use "taco seasoning" from this site, is too hot. I was a little leary to try this because of the corn starch, but I was wrong! I did add some salt to taste, but recieved rave reviews from all the kids, including a very picky 22 month old (who ate his whole taco...well the filling anyway). Thanks Waco Kid!!

Grandma Newman's Potato and Sausage Stuffing

Reviewed: Apr. 21, 2003
Good way to mix it up. It was also a good way to save room on the table (only having 1 dish for potatoes & stuffing). It was lacking flavor, so I addd some spices to the bread ie; thyme, sage etc. and some butter & garlic to the potatoes. Good space saver Bonnie!

Sunshine Toast

Reviewed: Apr. 19, 2003
I've never had these before, and I'm sooo glad that I found this because my son now thinks I'm the Bee's Knees for making these this morning. Not only are these completely easy, but cute as well. Robert commented on how "he loved how the egg cooked a little into the toast". I too carefully flipped them for over easy. Thanks for opening my eyes Cassie!!

Italian Restaurant-Style Dressing

Reviewed: Apr. 19, 2003
I LOVE, LOVE, LOVE THIS DRESSING!! I forgot to pick up the pectin, so that got exempted. I just blended the oil alone for about 45 seconds, and added the other ingredients (so that it wouldn't seperate). Don't let the corn syrup scare you, as I almost didn't try this because I thought that ingredient was odd. Thanks Barb!!

Iowa Pork Steak

Reviewed: Apr. 19, 2003
This was my very first time eating pork steaks, so I didn't know what to expect as far as the meat goes. But the end result was good. The pork was very tender, not quite a chop, not quite a steak. I cut the soup to 1 can & used the entire packet of onion soup mix, which resulted in an overwhelming onion flavor. Even with the soup cut in half, this made A LOT of gravy, plenty for the 4 steaks. I threw in a 1/8 c. of white wine that I had left over. I would make this again, nice every once in a while meal. Thanks Angela.

Scallops with White Wine Sauce I

Reviewed: Apr. 17, 2003
This turned out really good...to my surprise! I was very skeptical after looking at the butter contents & stopped adding it after 1/2 cup. It turned out really good, but very buttery. I added minced garlic & parsley. Next time I will cut the butter even more so I won't have to rename it "scallops with butter & a splash of white wine sauce" ;) Thanks DeeAnn!

Chicken Parmigiana

Reviewed: Apr. 17, 2003
The only thing that I regret about this recipe is not using my own sauce (but I'm not a big fan of jarred sauce). I skipped the egg step, and used "homemade shake and bake mixture" from this site (baby has an egg allergy) in it's place. Great EASY recipe! Thanks Candy!!

Baked Zesty Carrots

Reviewed: Apr. 16, 2003
I scaled this down to 2 servings, because I wanted to taste it before serving to the pickies. I thought it was really good. I did cut the mayo a bit, but it still had a nice tang. Will make again with fish. Thanks Doreen!

Stuffed Kielbasa

Reviewed: Apr. 16, 2003
Great, easy meal! I made my husband a smaller dish with just the kraut, because he isn't a huge potato (or cheese) fan. I used mashed potato patties from market day, and used shredded colby jack cheese (it needed color). Loved by all. Thanks Theresa!

Ham and Bean Soup I

Reviewed: Apr. 16, 2003
This was a unique tasting soup. I added some fine egg noodles to it to absorb some of the liquid, there was a lot of liquid. If I make this again, I will use crushed tomatoes, and less liquid (that was my fault). Thanks Jackie.

Brown Sugar Banana Nut Bread I

Very moist bread! Like a goof, I forgot to add the nuts and it seemed to be missing something. Next time I will be sure to tape them to my head so I don't forget them. I'm sure I'm just recovering from the shock of now having a "teenager" Happy 13th Arica!! Thanks for the recipe J.R.!

Renaissance Stuffed Mushrooms

Reviewed: Apr. 13, 2003
I made these Friday night to bring to my neighbor/friends candle party. I sorta snuck in with them & set them on the table & all night I kept hearing "who made these mushrooms, they're really good" and were asking for the recipe. I tasted a few before leaving (for dinner) and thought that they were pretty good, I didn't read the reviews before making them, but I agree with DREGINEK to skip the oil & mix the garlic in with the cream cheese mixture. While they were baking, they did get kinda "runny", but they were okay as they cooled. I got lucky & found 2.5 lbs. mushrooms with huge caps at Costco so I didn't have left over filling. Thanks Chris!

Hot Ham and Cheese Sandwiches

Reviewed: Apr. 13, 2003
My oh my, if you only knew. I pretty much HATE the smell of swiss cheese so therefore shy away from it (unless it's a sandwich from a resturant..eg: a rueben). Well I had some extra swiss from a different recipe along with every thing else on hand to make these EXCELLENT sandwiches. I used left over "French rolls to die for" from this site and these were great, my picky 11 year old even wanted more. Thanks Lois!
