Red Enchilada Sauce

Great! I realized that I was without sauce at the last min. and whipped this up in a flash. I used fresh chopped cilantro vs. the parsley. I added it to "Jaimes Black Beans & Rice" (from this site)and it turned out fab! I will use this again with enchiladas for sure. Thanks Sara!!

Jamie's Black Beans and Rice

Loved it! I used fresh peppers & onions vs. frozen and added chopped fresh cilantro as well. I also used "Red Enchilada Sauce" (from this site). Tasty wrapped with a warm tortilla, or plain with cheese on top. A keeper, thanks Jaime!!

Vegan Fajitas

Hmmmmmm...not my favorite. The vinegar was overwhelming. I love the idea & the veges, but I would go for more of a traditional fajita marinade next time. Thanks anyway Nancy.

Grilled Peanut Butter and Jelly Sandwich

MMMMM-a nice twist on an old stand by. When I was pregnant with my daughter I craved PB&J on toast and ate it EVERY day...why I didn't think of this is beyond me. I added sliced bananas on top of the pb. Very rich, but very good thanks Chasity.

Ultimate Twice Baked Potatoes

My son is on his 4th half...he loves them. I personally thought that they were a bit runny, so next time I will cut the milk down a little, but I still enjoyed them none the less. I used my melon baller to scoop out the potato and that worked great for me. Thanks Debra!

Easiest Mushroom Sauce

Excellent topper for grilled pork chops!! I too sauteed the onions in the butter first, then added the shrooms for a minute or so, then added the other ingredients. MMMM-MMM GOOD. Thanks Sara!

Banana Split Cake II

I made this for my banana lovin' niece who turned 7 on friday. Because the kids all swarmed around the cake, and then devoured it, I didn't get to try it, but they said it was "really, really good". Before I added the whipped topping, I drizzled a 7.25 oz. bottle of "Twix Magic Shell" (made by Smuckers) over the bananas, put it in the frige to harden and then added the whipped topping. Oh and I also soaked the sliced bananas in the pineapple juice to prevent browning. Thank you so much Judy, my nieces & nephews once again think that I'm the bomb!!

Miss Bettie's Zesty Grilled Corn

This wasn't as "zesty" as it was cooked on the corn, BUT if you put it on the corn after grilling, it has the zing. I dipped my ham in the left over butter sauce and it was delicious! I will make this mixture with ham from now on!! Thanks Teresa!

Bone-In Ham Cooked in Beer

Excellent!! I was a little reluctant to put pineapples, and being the doe-doe that I am, I bought crushed pinapple instead of sliced, but I'm glad I did, they worked out just as well because I basted every so often. I used Sam Adams Summer Ale (yum) put it on the grill and it came out great. Family loved it, thanks Lisa!

Grilled Zucchini II

YUM-YUM! At my local farmers market, I found what they call an 8-ball....no, not that kinda 8-ball...It is a zucchini that they said "has gone wild". It looks like a small pumpkin, meaning it is round, which made for perfect larger slices to grill! This is a simple side that is sure to please, as Linda put it, what's not to like about it?? Chicken with Rice and Gravy

YUM! I just have to say that I am HORRIBLE at #1 frying foods & #2 making gravy, however, this was a SUCCESS! I LOVED the fact that there was no egg (lil' guy is allergic) and the whole preperation didn't trash my kitchen! I ended up using 3 breasts & 3 leg/thigh pieces, & since I made potatoes for the kids I used potato water for the gravy, which turned out really good = the kids didn't think that I made it. Thanks Anissa, for the tasty, simple & easy clean up meal!!

Good Burger

Unachica, you're absolutely right, these are not your every day burger, but that IS the beauty of it = a great change from the every day version. If you read the description of the burger, it states that they are not exact measurements, so I really didn't have a problem in that area (my tastes), I did use a little less sugar, but everything else was as written. Oh, I also mixed it into a pattie and put it in the fridge so that the flavors could "marry". It was a good burger, not an everyday burger, but a really good once in a while burger (sweet tooth burger). Next time I will try it topped with mango salsa, thanks Unachica!

Caribbean Jerk Pork Chops

This marinade has a wonderful flavor, BUT is not hot enough to be considered "jerk" (well at least for our gang). I brought it to a bbq & everyone loved the chops, even my husband who is not really a "marinade guy", because they were very tender. Even though I doubled the cayenne, it still wasn't close to hot, I'll add some red pepper flakes, or a jalepeno next time, but they really were yummy and there will be a next time! Thanks Marvin!

Fruit Kabobs with Margarita Dip

This is sooo good! I used "Bacardis real fruit mixers Margarita" concentrate (because I was making the margaritas anyway) instead of the OJ concentrate & I had to skip the tequila due to the kiddies the dip still came out fab. I only made a few skewers, for presentation and stuck toothpicks in the rest of the fruit (strawberries, grapes & cantelope) in a "chip & dip dish". It looked nice & went well, thanks!!

Fajita Marinade I

I made Fajitas last week for my Mothers birthday "Mexican Fiasco" (we call it that because it is a fiasco when the whole family gets together..ha!) She absolutely LOVED this. I used 3# chicken and 3# of steak (round steak & believe it or not it came out tender) and there was only a little of each left over, which my Mom took home. Thanks for the easy & great marinade Roberta!!

Snappy Green Beans

My husband really liked these, but I made them into a "cold" dish. I used fresh green beans, "garlic red wine vinegar" and also added minced garlic. I also used already cooked bacon to eliminate some fat and then steamed everything together in my microwave, let it cool & served. Nice easy side, thanks Casey.
