Chow Mein Clusters

Boilermaker Tailgate Chili

made this last week. made as written, but left out tabasco and cayenne. dont like it too hot!! was perfect for us. this makes a LOT of chili. with cheese and chips and sour cream on top, this was the best!! also froze well.

Roasted Beets and Sauteed Beet Greens

i saw this recipe last year, and when i went to a farmers market this weekend, i specifically got beets to make this. my boyfriend gave it rave reviews. neither of us had ever had beets this way, nor the greens. i followed the recipe as written. the beets came out very sweet.

Artichoke Spinach Dip

made this as a pre-dinner appetizer. served it with tortilla chips. i added xtra parmesan cheese, and topped it with a jack/cheddar combo, and popped the whole thing in the oven to brown the top. the kids scarfed it down, and didnt want to eat anything else! a definite winner. easy and delicious.

Tuscan Soup

very delicious, and fast. great for a weeknight. i found the hot sausage a little hot for my own taste, but the BF loved it. diced up a lone zucchini i had hangin around. next time might add cannellini beans as others suggested. and used heavy cream as i like a thicker soup.

Chicken Marsala

my boyfriend loves to cook a new recipe for me every week. this came out soooooo goood! and easy too! he added xtra mushrooms. the chicken was so tender and the sauce was so tasty. we served it over angel hair pasta. this is good enough for company. definitly a keeper!

Connie's Zucchini "Crab" Cakes

a good way to use some of that zucchini. tated pretty good, but not really like crab. i made a sauce with ranch dressing mixed with horseradish.

Easy Banana Bread

I had some bannanas that were going bad, and found this recipe. i accidentally put in 2x the vanilla (oops!), but it didnt seem to cause a problem. this is the best recipe for banana bread ive made in years! definitly a keeper!

Cream of Spinach Soup

mmmmmmm goood!! made this at the last minute today since it was so cold and rainy. it was very very easy and quick. i used fresh spinach, and just chopped it a bit with the hand blended after it wilted down. this will definitly be on my regular soup menu!

the taste was average. the cheese totally melted out into the sauce, and the beef seemed a little tough and dry. kind of a pain to tie each piece up. too much work for a weeknight meal.

Iced Pumpkin Cookies

like yummy pumpkin bread in a cookie! i sprinkled them with powdered sugar mixed with cinnamon, so they would be easier to stack. two days later, they are still soft and yummy! i think they taste better the next day, when they are cool and seem spicier.

Champagne Shrimp and Pasta

cooked this tonight for my date, and it was soooo good!!! definitly a keeper. i added asparagus tips and artichoke hearts and doubled the sauce recipe. i used asti spumante, which gave it a great sweet taste. next time, ill use shrimp that has already been peeled to save time.
