Creamy Smoked Salmon Pasta

I threw this together for a quick dinner and was pleasantly surprised- in fact I enjoyed the smoked salmon much more when prepared this way. I didn't follow the recipe exactly- I used rotinipasta, which is what I had on hand, substituted spinach for mushrooms, and added about a tablespoon of lemon juice to thin out the sauce at the end. I would skip the onions and peas the next time as I did not care for their texture, and I would recommend using lemon juice if your sauce becomes too thick- I think it complemented the dish quite nicely.

Rosemary Chicken with Orange-Maple Glaze

Loved this recipe. I used TJ's orange peach mango juice and stevia-maple syrup blend, and had no problems getting the thick consistency. I ate it over brown rice with garlic green beans, and next time I am going to have it over sweet potatoes. the sauce is so good! This is a recipe I'll make next time I want to impress someone :)

Roasted Garlic Cauliflower

OMG! so delicious and easy! My roommates always comment on how delicious it smells baking, and the taste does not disappoint. Delicious over sausage/cranberry couscous and super easy to make.

Oyakodon (Japanese Chicken and Egg Rice Bowl)

This is one of my favorite Japanese dishes and it tasted just like the real thing, even without dashi. I've never eaten this with jasmine rice so I went with short grain brown rice and it was perfect.

Stir-Fry Sesame Green Beans

Didn't have ginger or apricots so substituted the sesame oil/soy sauce for TJ's pineapple teriyaki sauce- super easy and yummy! Excellent side dish for Japanese grilled chicken over brown rice. I loved how fast it brought my meal together.

I serve side by side with pasta dishes to get some veggie goodness in. Great for when you first go grocery shopping and have a ton of veggies to use up, as you can substitute or omit where needed. Personally, I liked the "juicyness" of it over noodles and found it dried up a bit more as leftover. I can make a big batch for myself to last a week as an easy dinner and lunch dish or side dish.
