I made this recipe exactly as is-- turned out excellent. Took advice from another review and did not add anything to thin, but just spread my pancake out onto griddle with a spatula. They take a bit longer to cook than regular pancakes but they are very filling, and a nice treat from the everyday pancakes. My son loves anything pumpkin, and these were no exception

Pumpkin Brownies

Janet's Rich Banana Bread

I made this recipe exactly as is only substituting the walnuts with chocolate chips (kids request). It turned out fabulous. Really moist but not falling apart. I will probably never make a different banana bread recipe.

Elegant Scalloped Potatoes

I did not microwave mine, but like another reviewer, left peels on, baked 1 hr covered, then 15 uncovered. I did not use bacon (since served with ham), and didn't include cheese on the top- too greasy. I think the bacon would be great though! Very good recipe, easy to follow and everyone loved it. Better than the normal scalloped potatoe recipe!

Quinoa Veggie Salad with Zesty Vinaigrette

As per other reviews, I made half the amount of quinoa, but the dressing the same amounts except only half the oil. it was extremely tasty, and the fact that it's good for you is just bonus.

Ham with Honey and Brown Sugar Glaze

My sauce did not thicken either, until it was completely cool. Next time I would maybe cook it with half the sauce and try to thicken the rest with cornstarch or something and spoon that- when hot and thick- over the ham before serving. The sauce was good, but with all the rave reviews, was expecting more.
