Savory Kale, Cannellini Bean, and Potato Soup

Delicious! I had every ingredient but the cannellini beans. Added leftover chicken and a handful of green beans picked fresh from the garden. Yum.

Vegetable and Tofu Stir-fry

Overall a very simple and flavorful dish! I didn't have bok choy so I shaved off some regular cabbage which worked great. Only had 1/2 a pack of tofu and there was more than enough food for 2 people.

Fish Chowder

My husband is a man of few words, but upon eating this dish he told me I had knocked dinner right outta the park. We agreed to try it next time with just 1 can of evapo milk first. Wonderful recipe!
