I made this once before and gave it a 3 star rating. Even though my company liked it I told all of you that I felt I had overbreaded it, lacked garlic flavor and was dry. I tried it again today and now give it 5 stars. - I followed the recipe exactly last time - this time I made changes. Like others, for 4 chicken breasts I ended up doubling EVERYTHING! After preparing the oil and garlic, I poured it in a baggie along with the chicken and marinated in the frige for 2 hours (less or more time will improve the taste). So as not to overbread the chicken, I used the shake and bake method and put the seasoned breadcrumbs and cheese in another bag and shook the chicken a piece at a time, shaking off the excess. I also cooked it less, 425 degrees for 25 min. It was outrageous!!!! The chicken was moist, infused with garlic flavor, you could taste the moistness of the parmesean cheese and the house smelled scrumptious! I served it with Fettucine Alfredo, cranberry sauce and a salad with Italian dressing. I plan to make it again next week and serve it with spaghetti w/red sauce,a salad and Italian bread. A definite keeper - glad I tried it again.
